@LMWST36 What is Trader Joes. I forgot to look at the spelling of it before I hit reply *sorry* but what is that? I was looking at some of your meals and you sound like you eat clean. I am going to write down some of your meals they sound great!

Dinner last night was from the eat-clean site. It was chicken breast with honey, balsamic vinegar, thyme, sea salt, pepper and olive oil with a side salad.

Today is my "Meatless Mondays"

1 cup egg whites scrambled with scallions and mushrooms
1 slice Trader Joe's Sprouted Multi-Grain bread
1 tablespoon almond butter
1 cup berry mix (blackberries, raspberries, strawberries) with a drizzle honey

Slow roasted whole pork loin in a green chile sauce, grilled; yellow and green patty pan squash, Mexican green onions, and zucchini right from farmers market 10 minutes earlier. Steamed garlic rice (ran out of brown rice) and my fiber one cottage cheese, avocado, home made salsa.

Tonight and all day was a wash. I'm off my routine due to a very rough week or so - death in the family. Sunday was the first home cooked meal I had in over a week. So I just ate and ate, felt very hungry.

I also have been skipping my morning greens/protein smoothie, didn't realize how much it stabilizes me during the day. So dinner was a peanut soup/stew (it's in my recipes) and a can of chickpeas, 2 corn tortillas with marmite and almond butter - ugh!!

Today is fat day so it wouldn't be fair to even talk about the naughtiness for the evening!! Hubby and I tried a garlic and lime chile shrimp though Friday night!It was fabulous! We grilled it on skewers but found the basic recipe on spark recipes!

Awesome stir fry (with only a spray of oil). This is what I had on hand. (Can you tell it was a veggie work day)? :)

High Protein Super Firm Tofu, Quinoa,
Snap peas, Peppers, Onion, Broccoli, Carrots, Kale, and of course... ginger and garlic!

Low glyecemic rice and veggie based pasta (Trader Joe's) with a roasted butternut squash and soyrizo sauce, mexican spiced and marinated baked shrimp, wilted market greens and Cotija Mexican cheese. This sauce is so good. As a Mexican its a sin to be using Soyrizo rather than regular chorizo, but keeps the fat down.

Tonight's menu is:
Bratwursts (not my fave/to high calorie, but hubby loves them)
Sweet potato homemade "fries" with cayenne pepper and curry spices
Salad (gotta eat up the veggies before they go bad)
with homemade EVOO and balsamic vinegar dressing

Well since it's my son's 18th B-Day. He got to pick the menu. Mom's home-made whole wheat pizza, and Bruchetta fingers. Plus cake and ice cream. Cake and ice cream is usually not on the menu. Today's an exception.

I threw some chicken, diced tomatoes, onions, garlic, chicken stock, sage, thyme into the crock pot...came home, shredded the chicken and had a tasty soup with a sprinkling of feta...I was wishing for some red wine to add to the simmering pot, but we didn't have any in the house....still tasted yummy and hearty after coming in from an adventurous trail ride on the horses all afternoon. Half the battle is won by the scent of the food, and boy did our house smell GOOD!

To lose weight is simple but not easy.
