Thanks for the ideas on potatoes. I hadn't thought of using fat-free yogurt, I'll have to try that. We love the garlic potatoes or garlic cauliflower either one. My all time favorite is mashed sweet potatoes though with just a touch of cinnamon.

Russian fingerlings is one of my favorite potatoes. Here is something to chew on, two of your post said you cook your potatoes in chicken stock which is delicious, but I used to do a butter braised purple Peruvian. Yes fully submerged in melted butter, covered and braised in a low heat for 90 minutes. This was in a restaurant not my home, but so good.
I like most people am a fan of mash potatoes and having 2 young ones at home means I have to cook them pretty often. Here are some of my tricks to help make them healthier. 1)Substitute reds skin on, sweet potato, yams, or baby news skin on for russets 2)I substitute low fat cottage cheese and low fat milk for butter, sour cream, and heavy cream. 3)Sometimes I cook off a different vegetable and puree it to add a healthier kick and color to the mash. Example; roasted beets and then puree with lf milk or low sodium chicken stock or blanch chives and doing the same. Side note if using the beets, add a touch of goat cheese as well because this combo is incredible. Who says we cant have mash potatoes?
