Mashed cauliflower is the normal side to my healtyh meatloaf.

I boil it in chicken stock, add a tiny bit of butter and some fresh grated parm. Yummy, no one misses the mashed taters!

Oh, and colcannon is my love. But, I make it with regular potatoes and kale. I would eat it every day if I could!

I also make colcannon severall times a year. It's essentially mashed red skin-on potatoes (my personal preference)or Yukon Gold potatoes with cooked kale. It's delicious! Many people make it with Savoy cabbage, and that's also good. www.seriouseats.com/recipes/2010/03/

I just wanted to say that this team is a lot of fun. I just love all the banter.

Thanks for the ideas on potatoes. I hadn't thought of using fat-free yogurt, I'll have to try that. We love the garlic potatoes or garlic cauliflower either one. My all time favorite is mashed sweet potatoes though with just a touch of cinnamon.

Hey.... You asked the question "Who says we can't have mashed potatoes?", and I answered it. Honestly.

Truthfully, though, the thing I'm looking forward to the most once I'm off this cutting diet is a big glass of skim milk.

And Debra, I pay him to torture me! He's my long-distance trainer and nutritionist! I simply love harrassing him!

Russian fingerlings is one of my favorite potatoes. Here is something to chew on, two of your post said you cook your potatoes in chicken stock which is delicious, but I used to do a butter braised purple Peruvian. Yes fully submerged in melted butter, covered and braised in a low heat for 90 minutes. This was in a restaurant not my home, but so good.

I enjoy cooking parsnip, garlic & golden potatoes in chicken broth and then add Greek yogurt and mash.

Last night I steamed fingerling potatoes in chicken broth, delicious!

I've substituted the margarine with fat-free yogurt myself. I thought it pretty good!

I do a quick mince of garlic and put it in the boiling water with the potatoes....adds wonderful flavor

To lose weight is simple but not easy.

I used to do those at one of the restaurants I cooked at. I like to do a little cheese and egg wash on top then in a ramekin bake in the oven and nice little crusted top

I like most people am a fan of mash potatoes and having 2 young ones at home means I have to cook them pretty often.
Here are some of my tricks to help make them healthier.
1)Substitute reds skin on, sweet potato, yams, or baby news skin on for russets
2)I substitute low fat cottage cheese and low fat milk for butter, sour cream, and heavy cream.
3)Sometimes I cook off a different vegetable and puree it to add a healthier kick and color to the mash. Example; roasted beets and then puree with lf milk or low sodium chicken stock or blanch chives and doing the same. Side note if using the beets, add a touch of goat cheese as well because this combo is incredible.
Who says we cant have mash potatoes?

You can play around and make your own combinations.
