I try to buy the best quality cheese I can and use it sparingly. 2 weeks ago I had a raw milk cheddar that I met the farmer who makes it, $14 for 1 lb, but at room temp, it was amazing! I have some feta, a soft goat cheese, a good asiago, a sharp cheddar, and a small bit of blue cheese in the fridge now.....just a little here and there to set off a meal....yummy!
Make sure if your doing the beans yourself that you change the water multiple times during your soak and you can use a few bay leaves or kombu (seaweed) while you cook them. These are both high in glutamic acid and reduces the gas producing properties.

been eating Greek yogurt..plain, with fruit and small amt of homemade granola and I've not noticed any gas....hummus and re fried beans are doing it to me now too....never used to have issues....haven't made homemade hummus in a while, or re fried beans for that matter...maybe I should and see if that makes a difference..on a day I'm staying home,
High sodium huh? Regular lowfat Knudsens CG has around 440mg per 1/2 cp and the lowest I have seen is Fiber one CG with 430mg per 1/2 cp but the protein drops about 4 gms on this product. I dont really consider either too high, unless your just sensitive to sodium.

I LOVE goat cheese, feta, Parmesan, extra sharp white cheddar....I LOVE cheese....I either buy it real expensive and dole it out sparingly or buy the really mild cheddar which I could care less about and let the kids have it....when I was about 2 my mom had taken me grocery shopping and I was hungry on the way home, so she opened a block of cheese and handed it to me, I was quiet all the way home and ate nearly half the loaf! insert sheepish grin here

What about the Queso Fresca (did I spell that right?) you told me about? I actually found it in WalMart here! Didn't buy anything because I had enough Feta to last a while, but I'll try it next time, if it fits into whatever you throw at me next. :-)

Thought I would share some info on cheeses since I am such a cheese lover. I find it difficult to be away from one of my true loves, cheese. So I thought I would list some of the best choices as far as protein count to fat count. Might as well get the best bang for your buck when choosing cheese and not feel guilty about it. 1% Cottage cheese of course tops the list at 1/4 cp 14 gms protein and 1.2 gms fat Pamesan, 1/4 cp is another 10 gms protein and 7.5 gms fat Ricotta, part-skim 1/4 cp 7 gms protein and 4.9 gms fat The 3 Gs are great as well Goat 1 oz 6 gms, 6.5 gms Gouda 7 gms, 7.8 gms Gruyere 1/4 cp 8 gms, 8.7 gms
So enjoy some cheese and never say no to anything. Moderation leads to relaxation.
