I originally left this recipe on on my spark page but wanted to share it with the team.
Want a healthy alternative meatloaf. Try this. By some fajita chicken with the peppers and onions already in it. They usually come in a 2 lb package. Use a lb and a half and roughly chop chicken and veggies, but keep a little chunky set aside in lrg bowl. Use one can of black beans rinsed and puree with a little water but again keep chunky. Add to bowl. Add 1 1/2 cups of bread crumbs whole wheat if making your own, or you can use healthier corn chips instead just mash them up in a plastic baggie and add to bowl. Sprinkle 1 /1/2 tsp of garlic salt, paprika, and cumin to bowl. Add 2 whole egss or 2 whites and 1 whole egg. Mix well. If you like you can add some cheese in mix. Its up to you, just adds nice flavor and a little more calories but still a healthy meal. Place mix in 8x5 deep glass casserole dish. Bake at 420* for 25 mins. then remove and set aside. Mix 3 tbsp of ketchup and 1/2 cup of your salsa of your choice. Spread this mix over top of meatloaf and place back in oven for another 20 mins. Enjoy.
