I am new here and saw your post from Feb. Sorry this is late...but here it is: Penne from Heaven
1 cup chopped red onions
2 cloves minced garlic
1 1/2 cups chopped zucchini
1 can (28oz) diced tomatoes (w/ juice)
1 cup no salt added tomato sauce
2 tbsp tomato paste
2 tbsp each chopped fresh basil and oregano
(or 1 1/2 tsp each dried)
1/2 tsp black pepper
1/4 tsp crushed red pepper flakes
12 oz penne pasta, uncooked (about 4 cups)
8 oz unncooked jumbo shrimp, peeled
8 oz uncooked scallops
1/4 cup sliced black olives
1 cup crumbled feta cheese (4 oz)
Fresh chopped parsley for garnish.
Spray lg non-stick saucepan with non-stick spray. Sautee onions and garlic. Cook and stir over med heat for 3 min, or until onions are softened. Add zucchini and cook another 3 min. Add the next 6 ingred and bring to a boil. Reduce heat to medium and simmer uncovered for 10 min.
While sauce is cooking, prepare pasta according to package directions. Drain well and keep warm.
Add shrimp, scallops and olives to sauce. Increase heat to med high and cook 3 to 4 min until seafood is cooked through.
To serve, put penne on plates and top with sauce, followed by crumbled feta and chopped parlsey. Serve immediately.
(I toss the seafood and sauce with the pasta before serving it, and let others garnish with feta and parlsey.)
