Other ideas are to add mushrooms to your meatless entrees. Cremini mushrooms have a beefy kind of flavor anyway. Today's Rachael Ray had a great recipe using Marsala wine, onions, garlic, thyme and beef stock-which you can replace with vegetable stock. Add salt and pepper later so they don't pull out too much moisture. This is a great addition to a light pasta dish or to serve over rice. And of course a big ol' portobello mushroom grilled is a great meat substitute as well and goes great on sandwiches, pita pockets or other meals.

Thanks Jenna :) I might give the chili a try this weekend that is a great idea. :) It's been a while since we've had chili and I don't recall ever making it with out meat so that is something to try. :)

You'll notice from this list that I am big on beans. I love them. I will note that the chili is my favorite and has won many awards. Every time I enter it in a chili cook-off, I win first place over all the meat-based chilis. (Shameless brag.)
Other ideas I've seen that I don't have recipes for are: Vegetarian lasagna-using spinach and mushrooms instead of meat in the sauce. Even replace the noodles with thin sliced zucchini if you're feeling adventurous. Mushroom and tofu stroganoff-I have a recipe but it's at home. It needs a major makeover, but I bet you can get some ideas from sparkrecipes for that! Veggie Spaghetti
