Just found a new one yesterday: Chicken burgers

1 lb ground chicken
1/2 cup panko bread crumbs
1-3 Tbsp parmesan cheese (or to taste)
Seasoning if your choice

Mix it all together in a bowl and then form 5 medium-sized patties and grill. Delish and goes great with sweet and sour sauce. Easy to make and takes about 10 minutes.

Chef salad: put little bowls of chopped lettuce, lots of other vegies, a few hard boiled eggs chopped and have the family make their own salads.

Tilapia fried up in a little cooking spray, vegie and far east couscous... super easy

When I am hungry but too lazy to put any thought into it or craving something bad for me I always opt for a green smoothie. I make 2 servings at a time (one for me and one for BF) and I use 3 cups of spinach, 1 very ripe banana that I froze in chunks, 1 cup frozen pineapple, 1 cup of iced green tea (water, milk, nut milk all work well- I like the mild jolt of caffeine), 2 tablespoons of fat (nut/seed butter, flax meal, olive oil, avocado) and either 1 cup fat free cottage cheese, two scoops of protein powder or 1 cup of fat free plain Greek yogurt. I change up the frozen fruit, liquid, protein and fat to make different tastes like chocolate, avocado and mint or banana and peanut butter, peanut butter and jelly or cherry almond. There is so much you can do and still keep them healthy :)

For dinner I tend to fall back on healthified versions of casseroles we love and large colorful salads or veggie sides.

mmm. chopped cucumbers, garlic and herb mrs. dash, olive oil (usually 1 to 2 tsp depending on how many serving) instead of mayo, and tuna mixed together and stuffed in the small sweet peppers... yum.

i also love to make what my kids call my really healty breakfast a lot for dinner. I use 1 whole egg and 2 egg whites beaten together. I then sautee some mushrooms, zuchinni, and yellow squash, and onion in a spritz of olive oil and then when the veg is done i make scrambled eggs from the eggs and mix them together. I then add some freshly grates parmeson and garlic and herb mrs dash. The kiddies even like it on a tortilla but i usually omit that for me. :)

@mandee did you ever find some good smoothies recipes we are going to try and eliminate some of our sweets and use smoothies in place of them because they are a good source of vegies and fruits.

One that has been working for me is: sautéed in a bit of olive oil or sesame oil. Broccoli finely chopped, 1/4 cup onions, 1 clove of garlic, handful of spinach leaves, salt, pepper. Then add 1/3 cup egg whites and cook till done. Before serving add Thai hot sauce or any hot sauce and for garnish - fresh cilantro or chives.

Breakfast:
6oz dannon light and fit vanilla yogurt mixed with 1/4 cup of special k touch of honey granola, with 6 almonds

I took a Sunday and cooked up about 8 lbs of ground beef. My go to meals are: taco pie, Bisquick cheeseburger casserole, tacos and sloppy joes.

In the winter, I will coil up 3-4 chickens and pull the meat off. Then, I can make pulled chicken sammies, chicken and noodles, chicken and dumplings.

We also like breakfast...scrambled eggs with veggies mixed in and salsa on top.

I didn't say it would be easy, I said it would be worth it!

I am just starting back but some go to meals for my family have been spaghetti with meat sauce and just about anything I can turn into a stew in the crockpot. We also do a lot of quick mexican type foods, fajitas, tacos, burritos, enchiladas.

A few of my go-to meals for supper are chicken stir fry, tacos/taco salad, and ham & potatoes. For lunches, I love to grab greek yogurt, a piece of fruit and a meat & cheese roll-up OR cottage cheese, a fruit, and a veggie OR a good ol' meat and cheese sandwich with a piece of fruit. Breakfasts are the meal that tends to see very little variety during the week for obvious reasons. It's either oatmeal and fruit, a homemade breakfast sandwich, or a smoothie.

This might not sound good to some, but it is really yummy and easy. Mix the portion of cottage cheese you are allowed and mix it with the black bean portion you are allowed. It is sooooo good! Try it, just once, see if you don't agree with me how good it is. You can also use different types of beans.

Our favorite quick fix is leftover chicken breast shredded, fresh spinach, diced onion, and fresh mushrooms pieces. Toss it in a frying pan with some olive oil for a quick spin and then chow down.

If it weren't for the bad days, the good days wouldn't shine so bright.

I like to pick up a rotisserie chicken from the store on the weekend and discard the bones and chicken. I then have the basics to make a quick stir fry by throwing some diced onions and peppers in a skillet with canola oil and saute with shredded carrots, and add the chicken plus some lite soy sauce and or terriaki heat thoroughly and put over brown rice (the kind you heat in the bag). Other things I make in a pinch is strawberry, chicken salad and I've even made chicken tacos with them. Good eats!

I like dicing onion, mushrooms, asparagus and garlic and putting it in an airtight cup in the fridge. In the mornings, I put about 3-4 TBS in some olive oil and sauté, throw in a handful of spinach (fresh or frozen) and sauté, meanwhile, mixing a couple eggs in a cup with some black or cayenne pepper, pour it over the veggies, cook, top with cheddar or pepper jack (or both) cheese.
You can even make it the night before but it really only takes about 10-15 minutes to fix if you already have everything chopped. It's a great (and filling) breakfast. You can add bacon or sausage if you like; possibilities are endless.

I haven't discovered any quick to-go meals yet. When school starts again (I am a teacher) I will have to plan my meals the night before, and have the ingredients ready. I plan to go to the gym before I go to work so I can have my afternoons free for a second or third job. If I don't I won't do it. If you guys have any ideas I could pack for my lunches during the school day that will fill me up or any quick snacks (besides apples....I eat them all of the time), I would appreciate it. :-)

I am always so rushed in the mornings so I always try to make a breakfast bake of some kind on Sunday nights that will last me the whole week. I am also trying to cut down on carbs so I try to make it high protein, low carb. I like mixing egg whites with half a cup of hashbrowns, 1 cup of ground beef, peppers and onion. Top with a bit of cheese and bake until firm.

For us, it's Sour Cream Chicken Enchiladas with home made spanish rice and beans. OR, Cheesy Chicken and Rice (from the back of the Cream of Chicken can)

My kids and hubby love them, and they are super easy to make when I don't have time 0 or I forgot to lay out the chicken since I can do them both with frozen breasts!
