I love cooking chicken quesadillas on whole wheat tortillas. They are quick and satisfying. I usually use Tyson's canned chicken, frozen peppers, onions, and low-fat cheese. I can also cut them up for a fun "fingerfood" for the kids. They love it!

Welcome Jan - We are glad to have you here.

All of the recipes look really great! Today I was able to do 5 extra minutes of crunches this morning. My stomach will be flat in no time.

Darcy – Great job on the weight loss!!! emoticon I love sweet potatoes too, I am going to go buy some over my lunch hour! I tried changing to carrots instead of sweet potatoes it didn’t work. Also sweet potatoes are better for you than regular potatoes.

Margo – I just tried the wheat pasta and it’s really good. I like pasta too much so I am trying not to eat too much of it.

Sharon – Way to go on the bike, you will see a difference when you weigh in again. Also bikes help get your legs toned so they wont rub together… I’ll be glad when I don’t have to worry about that!

Desi – I have some no/low sodium recipes too also I make my own dressing. Here is one of the ones that I make.

Sweet ‘n Tangy Dressing

From member "catlin". It can be used as a dressing or a dip for chicken.

1 (6 oz) can nsa tomato paste
1/8 teaspoon minced garlic
½ teaspoon garlic powder
½ teaspoon dried crushed red peppers
½ cup red wine vinegar
¼ cup apple cider vinegar
1 tablespoon dried parsley flakes
Equal (or other sweetener) to taste (I used 5-6 packs)
½ cup water
1 teaspoon chopped cilantro, optional

Mix all the ingredients together leaving the water to last. You can adjust the water depending on whether you want a dip or salad dressing. This recipe needs to be refrigerated overnight for all the flavors to mix. It taste much better the next day. If you’re going to use as a dip, try a little water, and heat it.

I did an extra ten minutes on the stationary bike. That brought my total cardio minutes to sixty today. That's a first for me! Sure hope it pays off. Good Night Ladies.

Good evening Sistas.

I decied to throw in an additional 20 minutes of Turbo Jam today since I was low on the cardio side this week. Uh...I probably won't be able to get out of the bed in the morning.

Since I am eating healthier, I have developed a taste for asparagus. Never would touch the stuff before.

This is my favorite recipe.

Zesty Marinated Asparagus

4 servings

2 lbs fresh asparagus, trimmed and cut into 2/12 inch pieces
1 1/2 cups balsamic vinaigrette salad dressing
2 tsp grated lemon zest
1/4 cup chopped fresh parsley
1/2 tsp freshly ground black pepper

Bring a large pot of salted water to boil.
Blanch asparagus just until tender, about 1 minute. Plunge into a bowl of cold water to cool.
Drain asparagus and place in a large resealable plastic bag. Pour in vinaigrette and seal bag. Refigerate at least 3 hours, turning bag occasionally.
Just before serving, drain asparagus, reserving vinegrette. Arrange on a serving platter and sprinkle with lemon zest, parsley, salt and pepper. Server reserved vinaigrette in a small dish on the side.

I have high blood pressuer so I ommit boiling in salted water and adding salt for seasoning. I also make my own salad dressing, since most on the market is so high in sodium.

Hi Jill! I'm in northeast PA in Scranton about an hour from Binghamton NY.
I am a fiber freak so whole wheat pasta is one of my favorites. I love creamy things and Ragu has a light alfredo sauce that's really good. Add alittle chicken and broccoli and you've got a quick satisfying meal. My favorite.

Good evening everybody; I hope everyone eating healthy. right now I can't stop eating bake sweet potato I think it satisfies my sweet tooth. but need to have variety in my healthy eating. I weighed in sunday did lose 4.5 pound. emoticon now working on getting in 8 cup of water in stuck on 6 cup for now. so have great day and don't eat no bad for you food emoticon

I enjoy cooking this fish dish that I just made up.
Ingredients
4-6 boneless Tilapia filets
lemon juice
season all
1 can Diced tomaotes
2 tbl of fat free half and half
Clove of chopped fresh garlic
diced onion
Italian spices - i.e Emeril's or fresh spices like oregano, parsley etc.
1-2 tbl olive oil

Heat the olive oil in saute pan
saute the onions and garlic just until transperant. If you use fresh spices add them before the tomatoes and saute.

Add the tomatoes
Add the half and half
Add the other spices
You can also add salt and pepper to taste if you wish.
Bring to a slight boil then cook on low for about 10 minutes or so to boil down and thicken a bit.

Arrange filets on baking dish sprinkle lightly on both sides with lemon and the season all. Then cover them with the tomatoe mixture. Cover the pan with foil and bake for 30 minutes on 350 or until done (tilapia is white and flaky fish)

serve over rice or pasta or if going low carb eat it over veggies.

You can get individaully frozen tilapia filets at Costco or Sam's Club. I think you could use the recipe with other fish like salmon. Tilapia is just my favorite.

Hey Everyone! Happy Monday. Today is weigh in day and I lost 2 pounds!!! Yeahhh

Erica - Thanks for stopping in, feel free to join our group too. Maybe we can have challenges with each others groups.

Jill – I agree with Mocha I try to do the small quantities too. Also salsa isn’t bad, it’s the chips. Remember that moderation is the key. If you allow yourself to have a treat, then don’t eat a lot of it. I am finally getting use to one serving rather than two. Nothing tastes as good as being thin. Practice makes perfect.

Mocha – Thanks so much for the reminder!


Today I am going to walk an extra lap and that will be an extra 6 minutes! I will strive to get 20 extra, but since this is my first time to see if my daughter can sing Easter children's choir I may not have time. We’ll see ... Some of you know how 2 year olds are.

Stacey,

Thank you so very much. I realized this weekend as the drama kept unfolding itself into my life that I have to make a change for myself. I have been using food as a comfort. Looking externally for something that I need to find internally. I am finding that when I am content my weight is consistent. I haven't had to really diet in at least 2 years. My life is starting to spiral out of control and so is my weight. I know there is a scripture that talks about contentment, I need to find it and have that be my mantra.

By the way I subscribed to the dieter's devotional and I am pointing my 2 sisters to the website, we are all striving to be Charlie's angels by July!

Thanks for your support and encouragement. Happy Monday to everyone and please forgive my typos I am always in a rush!

Ijust finished exercising...20 minutes of low impact aerobics and 30 minutes of walk away the pounds - walk & jog.

WHEW!!!! I'm exhausted.

So Stacy, I did 20 minutes more than normal.

I have things that might help.. try the low fat versions or smaller portions, hop e this helps. I find if I deprive myself I want it all the more LOL.

Well Im off for an extra 2 laps tonight since I had a heavy supper and I need soem alone time...

I have a question. How doe you eliminate the junk food. I have moved to trail mix and nuts and fruits, but sometimes I just crave a snickers bar or tortilla chips and dip.

What do you do to overcome that?

I love the idea as well, especially since its getting dark later. I like to walk on the track, but couldn't because it was dark before I got home. Now, I'm able to get home, change my clothes a walk about 8 laps. I'm going to go for an extra lap or two this week.

That was a great idea to walk an extra block. Sometimes kids can do that too you. I am about to go outside and run around with my daughter for 5 minutes to get a little extra exercise in.

I did an extra 5 mins today on my walk before I even knew whhat the challenge was LOL!! A lap of my block takes 5 mins and ive been doing 4 a day, today I added an extra lap, I wasnt going ot but I had already promised my son we would and he called me on it LOL. He took my hand and said come on mommy we can do it-- we did the extra lap plus we raised to the house-- im glad he was there to give me that lil push i needed.

I forgot to say thank you for creating this. This may just be the little motivational kick I need. A spark of competition is always a good thing. Looking at just where we fall and our score makes me what to do more. Every little bit helps.
