Slice it about 1/2 inch in round circles. Spray with pam or brush with olive oil salt and pepper bake until soft, but not mushy. Brush on tomato sauce and add mozzarella cheese or another favorite italian cheese, like fresh Parmesan. I mix my cheeses sometimes because mozzarella melts the best, then use your favorite spices such as oregano, basil etc. Put the eggplant back in the oven until real soft and cheeses are melted.. if you can have carbs get an english muffin, spread smart balance butter on it and sprinkle with garlic salt, toast the muffin in oven, then add a slice of eggplant on top of it and eat an open faced sandwich, yum!
This is an indian dish called baigan choka. Wash, remove stem and leave whole. Rub with oil . Make small incisions on skin and stuff with cloves of garlic. Wrap in foil and place on bbq grill or oven. Cook til soft 30 mins, remove skin. Crush with fork. Season with salt, bl pepper, hot pepper and chopped onions.Garnish with olive oil. Serve with pita or sum - sum bread.
I've only eaten it fried. Didn't like it. Not necessarily because of the taste, more the fact there are too many seeds.

I peel it and then I slice it into cubes. Then I put it on a pan and season it with a little onion and garlic powder. And some salt. I bake it in the oven at 375, for ten minutes. Then take it out and turn it over, for ten more minutes.
While it is baking. I warm some tomato sauce in a large skillet along with spinach. When the spinach cooks down and the sauce has come to a light boil. I add the eggplant to it. Cooking just a short while longer.
Take it out and sprinkle with Mozzarella cheese, put it over pasta. Delicious and healthy.
Made it to my maintenance weight of 125 pounds.
