I peel it and then I slice it into cubes. Then I put it on a pan and season it with a little onion and garlic powder. And some salt. I bake it in the oven at 375, for ten minutes. Then take it out and turn it over, for ten more minutes.
While it is baking. I warm some tomato sauce in a large skillet along with spinach. When the spinach cooks down and the sauce has come to a light boil. I add the eggplant to it. Cooking just a short while longer.
Take it out and sprinkle with Mozzarella cheese, put it over pasta. Delicious and healthy.
