Looks yum! We have this longish type of radishes in Poland, my Mom used to grow them. Beet like radishes-they happened to me once, first year after fertilizing my garden with fresh manure. They were gigantic and still very tasty LOL
Need to make some fresh kimchi myself :)

Yes, they are pretty now. But when the ferments have progressed, I'm sure they won't be so striking. I do hope they will be delicious. Maybe I should do before and after pics, from handsome to horrible, from weird to delicious...

I was given a lot of curious radishes. Some were oblong, red and white skinned, about 2" long. Some I mistook for beets. Of those, I had only the bulbs, no greens. Cutting into them, no beet they, red and white stripped innards. I made a couple of radish oriented kimchis, one with turnip sized rutabagas (?), and some pickled, fermented radishes, as well. I've posted a pic in our photos section.
