I have been a stay at home mom for 7 years and because of my husbands car accident a few years ago my life has changes as I knew It. I had to go back to work and have been working for the last years and a half. I willnot allow my husband to cook AT ALL. He eats more with his eyes then his head. For us I have mastered to art of getting my kids to eat foods that they wont touch. Like dinner tonight I made Enchilada Pie. I put corn tortillas then spreaded refried beans and on top of that i put a mixture of garbonzo beans, kidney beans, stewed tomatoes, onions, zuccini(Lots diced). I put a thin layer of cheese tortillas again and enchilada sauce and baked it for 20 min. They had no idea that it would have killed them if they saw me make it. I had 1 serving and i'm stuffed. i did the recipe on sparkrecipes and it said the it's 350 calories i believe I can't remembers now.
