Bunny - You say you love cranberry sauce... have you ever tried just taking a can of cranberry sauce and mixing it together with a pound of sliced kielbasa (you could use turkey keilbasa for a heathier alternative)... and heating it thru? Great in crockpot and with some fancy toothpicks.. GREAT APPETIZER! If you haven't tried it.. you MUST!

That's ok. I love cranberry sauce. I had cranberry sauce and rice mixed up together years ago. It was the only thing I had to eat in the house. I made a cup of rice and cut cranberry sauce up in it. I didn' think to put it in the rice while it cooked.Thanks for the recipes. emoticon

Oops! Sorry that I wasnt' clear in the recipe! After you mix the rest of that stuff together.. you pour it over the chicken and rice - (left that sentence out!-sorry!). The canned cranberry sauce just kinda breaks apart when you mix it with the other stuff. With regard to the seasoning - it depends upon which brand Wild Rice you buy. Some like Carolina brand (which is what I usually use) is all mixed together. Some rice mixes, like Rice-a-roni have individual seasoning packets... so you want not just the rice but the seasonings that go with it. Again.. sorry I wasn't clearer!

Hiya!

Sounds really good! I think I'll substitute boneless, skinless chicken thighs for the breasts, though (husband isn't keen on chicken breasts). I know it'll be higher in fat being dark meat, too.

Helpmebe, is the cranberry sauce suppose to be like a side dish? I don't see it included in the recipe. In the recipe you say combine the rest would that include the cranberry sauce. If it does do you cut it up or what? I really don't understand it. I love cranberry sauce. Also, which ones are considered seasonings? I am sorry but I am confused. emoticon Bunny

Cranberry Chicken and Wild Rice

6 boneless chicken breasts
1 1/2 cup hot water
1 6.2 oz package fast-cooking long grain and wild rice
1 16 oz can cranberry sauce
1 tablespoon lemon juice
1 tablespoon low-sodium soy sauce
1 tablespoon Worchestere sauce

Put Chicken in baking dish. In small bowl combine water, rice (with seasonings). Pour
around chicken. In small bowl combine the rest - Cover and bake 350 for 40-45 minutes

(1 chicken breast with 1/2 cup rice mixutre is 332 calories, 3 g fat, 63 mg chol, 592 sodium)
