Pozole y Carnitas (healthified soup)
Ingredients:

1 to 1-½ lb of pork butt-lean, bone out, cubed
1 can White Hominy- drained, rinsed
1 can Yellow Hominy- drained, rinsed
1 lg carrot, diced
1 poblano pepper, rough cut
1 chipotle pepper in adobo, rough cut [for extra heat add 1 Serrano pepper chopped]
2 Sweet Bell peppers (different colors), diced
3 Roma tomatoes, thin sliced
10 oz Low Sodium V8 juice
2 cp low fat or fat free Chicken or Vegetable broth
1 qt H2O
1 med Yellow or sweet Onion, diced
4 cloves of Garlic smashed, chopped
2 cp of Cilantro or Field Greens, rough chopped
1-½ Tbl EVOO or Canola oil DO NOT USE VEGETABLE OIL. We are keeping this HEALTHY.
Juice of 2 limes and 2 lemons

Spices:

4 rounded Tbl of dark Chili Powder
2 “ “ of Smokey or Spanish Paprika
1 “ “ of Tumeric
½ tsp dried Habanero flakes [sub: 1 Tbl dried red pepper flakes]
4 Whole Avocado leaves [found in Hispanic section of Market] {Bay leaves are NOT a substitute}
Sea/Kosher salt & Cracked black pepper less salt-more pepper will be used.

Let’s Get Cooking! - Brown rice or quinoa makes a nice side dish.
1. On top of stove, pre-heat a deep, heavy bottomed stock pot or wide, 12“-14” diameter, Dutch oven. Add oil.
2. As oil heats up, stir in carrot, peppers, onion, garlic. Sautee until just onions are just golden brown. Add pepper flakes, S&P to taste.
3. Remove above from pot to separate bowl. Add pork to pot. S&P to taste. Add tumeric. Stir slowly until pork begins to brown. Add half of paprika and chili powders. Continue stirring for 5 minute. Add half of broth to pork. Bring to boil , then lower heat to simmer. Stir pork until liquid is reduced by half.
4. Add cooked veggies to pork. Stir slowly for 3 minutes, allow to simmer.
5. Slowly add H2O. Return to boil for 5-7 minutes. Reduce heat to simmer.
6. Add hominy.
7. Add remainder of chili powder, paprika, add V8, remainder of broth, Avocado leaves, half of cilantro, add half of lime and lemon juice. Stir for 2 minutes.
8. Cover and forget about it for 2 to 2-½ hours.
9. Remove lid, add tomatoes and remainder of cilantro. Adjust seasonings.
10. Cover and let simmer for another 1-½ to 2 hrs. Remove from heat. let stand for 12-15 minutes uncovered before serving. Add remainder of lime and lemon juice before serving.
