On the days that I am working, I make a smoothie that I put in a travel mug with a straw. I sip on this on the way to work. I also have a travel mug of my coffee. I have a 22 mile trip, so I enjoy this along the way. Gives me a few extra minutes in the morning.

Keep on track

I like to make egg sandwiches like that sometimes, too. It feels like eating something bad--ala McDonald's--but isn't if you make it yourself.

I make egg sandwiches (which are my absolute favorite thing to get at brunch). One slice of toast, fry up an egg with either a spray or two of cooking spray or a little bit of olive oil and add a slice of low-fat cheese on top towards the end. Sometimes, if my lunch meat of choice that week (I rotate it based on what's on sale) is on its way out, I add a slice or two of deli meat to the pan so it gets all crispy and put that on top. I also make "omlettes" (which are more like scrambled eggs with stuff in them) by sauteing some veggies and then adding them into eggs with a little cheese on top. I occasionally try to make it look like an omlette, but it doesn't often work. I also have been eating a LOT of oatmeal lately, because it's been so darn cold here.

I got some Trader Joe's pumpkin waffle mix to serve this year for Christmas and it was stress free and everyone loved them. Served with fresh fruit and a bit of warm maple syrup.

I love breakfast, too, but I just can't eat all the kind of carbs that I love anymore. Probably never could but I did anyway which is why I gained so much weight! Anyway, I now have quick oatmeal every day, with ground flaxseed for fiber and extra Omega-3. It's filling, it's quick and I like it. Once a week I do have "carbs" and those are very challenging days for me!

Eggo's are quick and I do have a belgian waffle maker but the waffles are so big I'd need 3 other people to share it with as 1/4 would be the size of about 1 Eggo and when you're watching your calories and portions well we know how that goes.I could freeze them too of course... hey that's an idea. LOL My boyfriend likes pancakes more than waffles so I tend to make pancakes instead.

I don't think I've ever had an eggo waffle. I used to make waffles for my kids, and I sometimes make them for my grandkids, but I make the batter and fold in the egg whites, and send leftovers home with them. I never have more than 2 bread exchanges in the morning (that's 1 1/2 oz of bread, waffle, pancake, whatever) it isn't very much waffle or pancake.

Breakfast is my favorite meal. When ever I have fasting blood work done, I go and have eggs, pancakes and bacon. I go to Perkins because they have apricot syrup. Other wise when at home I do have a smaller and healthier meal. But I still eat my breakfast. When I have Eggo waffles I like strawberry cream cheese on them. emoticon
I do like eggs and have them in different ways.

Too old for waffles? Think of it as a trip down memory lane, everyone needs a waffle from time to time. Heck I'll throw an Eggo in the toaster for memory's sake every once in a while.

I make 2 Eggo's put an egg and either bacon or ham between and pour maple syrup (the real stuff not that fake crap) and enjoy. I'm a tea person myself but will sometimes have a coffee. Lately it's been yogurt for me with fruit and a bit of cereal mixed in for breakfast or poached egg on toast with a cup of fruit and always gotta have a glass of milk or juice with.

I am way too old to be able to have waffles for breakfast anymore, but I do like French Toast. A 1 1/2 oz slice of really stale bread, one egg tossed up with 1/4 cup milk, let it all soak up, lightly grilled on a non-stick surface with PAM. I usually put 1 tsp butter and 2 tsp real maple syrup on it. Lots of coffee! Can't have breakfast without coffee!

I'm with you. I NEVER skip breakfast. I don't know if it is the most important meal of the day, but it is the most reliably enjoyable.

Sooo breakfast is with out a doubt my favorite meal of the day. For Christmas i received a belgian waffle maker and was wondering if anyone has a good healthy belgian waffle recipe? or any good breakfast recipes for that matter like french toast or omelette's ... my weekend downfall is always a big unhealthy breakfast and i'm really hoping to change that, and i don't know where to begin !!
