I am way too old to be able to have waffles for breakfast anymore, but I do like French Toast. A 1 1/2 oz slice of really stale bread, one egg tossed up with 1/4 cup milk, let it all soak up, lightly grilled on a non-stick surface with PAM. I usually put 1 tsp butter and 2 tsp real maple syrup on it. Lots of coffee! Can't have breakfast without coffee!
I'm with you. I NEVER skip breakfast. I don't know if it is the most important meal of the day, but it is the most reliably enjoyable.
