This has been a great challenge it has made me realize that I am not eating enough of a variety of vegetables and fruits. In fact after realizing this I had to go to the store yesterday and consciously buy a rainbow. This is my rainbow: pineapple, watermelon, red and yellow bell pepper, broccoli, yellow squash, lettuce, banana and kale.

This challenge is fun and I realized yesterday that my diet this week has consisted of mostly fruits and veggies. Here are some of the foods I've been enjoying:

Red - apples, cherry tomatoes
Orange - carrots, sweet potatoes
Yellow - bananas, summer squash, plantains, pineapple
Green - spring mix, baby spinach, zucchini, cucumbers, avocadoes, grapes
Blue - blueberries
Purple - red cabbage - I've been adding it to my daily salads, great way to add some bulk without adding calories.

I've been having most of these foods in the form of a big salad that I eat for lunch. I've also been choosing fruits as snacks instead of bars or soy yogurts.

I'm really enjoying this Rainbow Challenge !
I felt invigorated after eating my corn-on-the-cob
(as-is, with no butter or margarine).
I found my purple grapes to be very refreshing !
The fresh strawberries and frozen blueberries were
invigorating, eaten with my breakfast cereals !
These colorful fruits and vegetables are definitely
the way to go !

I had peaches in my yogurt, raisins in my bran muffin. mango for snack.

Put colored peppers into my rice and beans tonight--peppers come in rainbows. Some golden raisins and craisins added some colors too. Lots of green from my garden lettuce. But I agree, blue is hard. We need to do this again in blueberry season.

The new challenge for this week will help us eat plenty of fresh fruit and vegetables. The Rainbow Diet Challenge: By the end of each day, try to have eaten at least one food from every color of the rainbow. Processed or junk food with artificial color does not count!
