I've been having wholemeal pitta with lettuce and cooked chicken pieces or tuna (pitta can get soggy with tuna if you are taking a pack-up though). If I could eat tomatoes I'd put that in as well. I also like rolls or sandwiches using light cheese spread instead of butter/marg or mayonnaise with cooked meats and salad.
I can't really help with pre-exercise snacks as I try to workout within a couple of hours of breakfast but I say that you can't beat a banana as a snack any time.
