Oh, but there are different kinds. You have to get the kind that is actually marked 'natural' and 'organic'.

I just found out the agave nectar is neither organic nor good for you... and I loved it on my pancakes.

A lot of traditional recipes you can substitute things to make them gluten free or dairy free or both. You can always substitute honey or agave for sugar, coconut milk, soy milk, almond milk for dairy, or actually, I've also substituted apple sauce for milk. Totally different texture, but it tasted really good, actually! And of course, for wheat you can use almond flour, rice flour, or a number of things.

The organic section of the grocery store is awesome!

Thanks LIZBIZ for the recipe idea and FIT_ARTIST for the info... I love to cook and just experiment so that is what I wiil do while I am convalescing.

Well, the apple pie recipe was super easy.. Although it is a treat. The crust was literally almond flour, olive oil, and agave or honey. I pretty much just mixed to taste and texture. The inside was apples cut up, some lemon juice, some honey, again, mixed to taste. I personally let my apples sit in the juice for a while. Then, after you bake the pie, I added some almond milk. Coconut milk would probably work, too, and heated it up for 5 more minutes. Or, if you eat dairy, cream would probably make it taste even better.

I don't eat gluten... I have found that a lot of things taste better also. Almond flour and coconut flour can make some really YUMMY treats!!! emoticon

That sounds wonderful. I recently have went to the Primal style of eating so have given up grains, most carbs and all processed sugars. I have bought so coconut flour, coconut oil but I need to get almond flour and and some locally raised honey.

If you have recipes you would wish to share, please do. This idea of eating clean, whole and fresh foods is so exciting for me, but I do not have the recipes for this type of eating. I am into this 100% for the past 3 weeks and am feeling the difference already.

Your mother is so lucky to have such an inventive daughter. Great work! Julia

This weekend I went to my parents' house, where my mom is on a strict diet where she can't have wheat, dairy, sugar (except natural ones in fruit/veggies/honey) or starch. So, I experimented making things with almond flour and other substitutes... So, things actually taste better! I even made a little pie for Easter with apples and a 3 ingredient crust: almond flour, olive oil, and natural honey. DELICIOUS!
