Thanks guys. I decided to bring a "brown rice salad with Cumin & Lime vinaigrette". It has garbanzo beans and fresh cilantro in it. I am thinking I should also bring some clean cookies. Maybe the ones from Tosca's book. The monster peanut butter/oatmeal ones with dried cranberries. I made them once and the were SOOOOO yummy!
I made fruit skewers for a bbq once & they were a big hit. It is a bit time consuming though. I bought a package of wooden skewers and used honeydew, cantaloupe, strawberries & blackberries. I balled the melons, cut the strawberries in half, and of course the blackberries were left whole. Then just stuck 'em on the skewers alternating fruits.

What about a great salad? Wouldn't have to be lettuce-based, you could do a wonderful pasta salad, or something with quinoa???!! I think you could be really creative! I would mix it all up, put it into gallon baggies, and throw it in a cooler --- I find that this works better than trying to fit a large bowl in a cooler. You can put it in a decorative bowl when it's time to eat --- don't forget a large serving spoon. Take a baggie filled with fresh herbs for garnish. OR, you could go with a fresh fruit salad.....lots of options.
This Saturday my daughter and I are going to attend "herd share" day at the farm we buy our raw milk, organic eggs, pasture fed beef and hormone free pigs from. The day is gonna be spent mainly so the kids can have some fun, but also to see how they do things around their family run farm. There is gonna be a potluck lunch. The host family will be providing their HOMEMADE beef hotdogs, and evryone is supposed to bring a dish. It takes about an hour to get there... and remember it is gonna be a family day; lots of kids. Also, these people and their customers (like me) are healthy foodies. Many are members of the WAPF. Healthy, natural clean food is a must (unless I want to look like a DOPE! lol) I'm stumped for ideas. I really want to bring something a little more exciting than veggie plates, salads and hummus dips. Something clean, yet fun for kids, and something that will go along with healthy hot dogs. Also, it has to make an hour long journey. So, stuff like sweet potato fries won't work either... Any ideas for this TALL order?
