Hi there. I've been a member of the team for a couple of weeks but this is my first post.
Thank you for the link. I've been trying to add at least a tablespoon of coconut oil a day to my diet, but I'm not having much luck. If anybody out there has been using it daily, I would love some tips on how to incorporate it into my diet.
Things I've tried so far - Sauteing veggies (hubby objects to the coconut flavor). I revised my no bake cookie recipe to use coconut oil, organic non-alkali dark cocoa, stevia & natural peanut butter. The cookies are tasty (if you like seriously dark chocolate flavor) but by my calculation each cookie has only 1/4 tablespoon of oil, but enough calories that you wouldn't want to eat many each day. I would love to add it to my smoothies in place of flaxseed oil, but that whole solid under 72 degrees thing seems unworkable since I like my smoothies very cold. I can't eat it straight - there is just no way. I've tried it in my special peanut butter & cocoa oatmeal, which is a lot like that no bake cookie recipe when you think about it. I like the taste, but oatmeal as a breakfast item leaves me hungry pretty quickly, even with the added fat, so I can't do that daily. It just ends up being extra calories.
Am I missing some easy things I could do?
