I am allergic to garlic so I really understand the difficulty of leaving garlic out of the recipes. I have to even pay attention to any ingredients like chili pastes, fish sauce, etc. Shallots are my go to substitution. Another thing that works to give a bit of extra taste is using fresh chives at the end.
On a side note though, is it just the taste of garlic or does it give her stomach troubles. there are lots of reasons including mild food allergies why people react badly to garlic. Sometimes they don't even make the connection but it can cause them to have an unexplainable dislike for it.
Don't tell her what you put in it. I do that with my husband all the time. He is always saying he doesn't like onions, but I cook with them a lot. I either cut 'em up so small that he doesn't know they're in a recipe or I cut 'em big enough that he can pick them out. He's even weird with veggies...if I ask him if he wants some he says no, but if I just put them on his plate he'll eat them...go figure.
If you are worried about the garlic over powering the recipe, scale it back a little. Maybe put half of what the recipe calls for. Good luck
Hi another thing I can't cook with, my wife can't stand the taste of garlic, she just says to leave it out of recipes, with that affect them, I want to do some simple soups but it seams they all list garlic in the ingredients. I know I could do anything with chili but she has to watch tomato's
