Someone PLEASE give Mike a hand here with a good and easy eggplant recipe. I'm not very experienced with eggplant.

My eating wants has changed but it is largely controlled by my wife since I don't drive, I need her cooperation in food matters and she could care less. Well that will change, she has more or less demanded that I fix lunch so she don't have to when she come home from work, well have in the past gone out. But now I have to learn how to cook, me cook. At least it won't be Lean Cuisine. I have to find some ultra simple vegetarian recipes a retard can do

You were right. That was a total eye opener. Laura you know how I feel about doctors anyway. I know they do not have your best interest at heart anyway. It frustrating to know that there are better alternatives, that have been proven to help and because of money they turn the other way. They are supposed to be helping. It is nice to know that if you take care of yourself and eat the right things you can really make a difference in your health. I like knowing I have the power :) I just wish some of the organic food was a bit cheaper around here. I did find some good deals today at the store though. I can say between Food Inc and Food Matters, they both have definitely influenced my eating and buying patterns. Which I am sure it their intention.
Thanks for sharing Laura

Don't think I would spray my strawberries with garlic, not within a month of harvest anyway but then that's when the critters like them! Maybe someone would like to Google an answer to this dilemma. I have heard of sprays and little repellent thingys that you can put around your garden but I haven't tried any 'cuz my whole property is fenced and I have dogs. The deer haven't figured out that the dogs can't get into the section of property where the garden is!

Those dastardly critters. The ground squirrels really like my strawberries (ate all of them last year) so those must be good for you too :) Not even gonna bother this year.
I hear if you use some kind of garlic mixture (garlic and water I think) or plant garlic they don't like that much and will stir clear. Course then if you spray them with garlic would it all taste like garlic?
I've never tried it because the strawberries are all that is normally bothered. We have a fence that keeps out the bunnies around the rest. I live in town so not many deer.
I'm watching Food Matters, Laura. Quite interesting so far.

Well. Stevia is all natural. You can actually grow your own stevia plant and eat it. I figure if it's safe enough for the deer to nibble on, it's safe enough for me. Animals have an instinct for those kinds of things.
Yes, some very small concerns from what I've read. The thing that helps me feel safe with stevia from a good source is that stevia has been used in other countries for hundreds of years with no known bad effects. Now that's science! And the reason that stevia was banned as unsafe as a food ingredient in the first was because of the lobbying efforts of the artificial sweetener companies. But as soon as those companies saw that stevia might just be a real profit making product they decided to push the FDA in the opposite direction. They got their way both ways! Those of us who had been using stevia before that knew where we could get it--in the supplement department where it had been relegated by the FDA. We didn't mind. But watching the big business/government dance was just...well it would be funny if they weren't so destructive with that little on-going frolic.
Annie, shut up now while you're behind!
I also like maple syrup, raw, unfiltered honey, sorghum, molasses and occasionally evaporated cane juice (all organic only) but in very small and occasional doses.

Stevia is a plant that has an extremely sweet taste. The healthiest way to use it is, of course, to grow it yourself. But most of us who use it buy it in powder or liquid extract. It is very popular now and naturally that means there are inferior stevia products out there. Some processing of the stevia compounds that hold the sweetness is not healthy--subjected to high temperatures and mixed with questionable chemicals.
There's also some political stuff surrounding the banning of stevia and then the all-of-a-sudden passing of it as "safe" by the FDA. It's a long story but the end of it is a product named "Truvia" put out by the CocaCola company followed shortly by another product called "PureVia" by PepsiCo. Because of all that nonsense I won't buy either of those products but instead have used products that I get through my food co-op (Sweet Leaf and Starwest) It's almost impossible to find out which stevia products are processed in the best ways so I simply buy from companies who have been in the stevia business a long time rather than those big fat cats who really couldn't care less about our health but only jumped on the stevia bandwagon to add to their bottom line. I just don't trust those companies because they will use any cheap method to process foods in order to keep profits up...blah, blah, blah Here's what Wikipedia says: en.wikipedia.org/wiki/Stevia
PS: I forgot to mention that it doesn't have any calories and that is why it is such an excellent sweetener for those of us who are trying to lose weight. And it is much, much safer than any other artificial sweetener.

So what is stevia and why is it ok? I don't drink soda and have only baked with Splenda a bit. But I drink a lot of tea and use sweetener - grew up on Sweet and Low because Mom was diabetic.

I like my stevia and honey the best. After that, I think I like molasses and maple syrup. Yes molasses and maple syrup are processed, but maple syrup is so yummy and molasses actually has some nutrtion in it (as does honey). I sometimes will use raw cane sugar if a recipe demands it, like making icecream. I haven't been able to succesfully make icecream using stevia. It turns into a hard ice. Something about the sugar that helps keep it soft I guess. Soft enough to at least eat.
FYI. Homemade icecream will always seem to turn rock hard after several days, no matter how nice and creamy it turns out initially. So, WHAT do they do to commercial icecream to make it cream ALL the time, I wonder...
I can't totally agree, KOKOEK9. Agave is wildly marketed right now so we're getting a lot of mis-information from the "pushers". As Laura said, it's not an artificial sweetener, it's a real plant extract. But, there's a lot of environmental concerns about the way it's farmed and harvested (spoiling lands) and the way almost all agave is processed leaves a lot to be desired.
Here's an excerpt from an article from the link below:
Agave Syrup is advertised as “low glycemic” and marketed towards diabetics. It is true, that agave itself is low glycemic. We have to consider why agave syrup is “low glycemic.” It is due to the unusually high concentration of fructose (90%) compared to the small amount of glucose (10%). Nowhere in nature does this ratio of fructose to glucose occur naturally. One of the next closest foods that contain almost this concentration of glucose to fructose is high fructose corn syrup used in making soda(HFCS 55), which only contains 55% fructose. Even though fructose is low on the glycemic index, there are numerous problems associated with the consumption of fructose in such high concentrations as found in concentrated sweeteners: If you want to read more about the negative aspects of fructose click on this link: www.living-foods.com/articles/agave.html

Well, agave isn`t artificial, and it is highly processed and I know the RAW foodies like it, but I`m afraid it isn`t raw either. I`m also not sure that it is low GI. Thanks for the input though... I will check into this further!
I have read the newest good artificial sweetener is agave, as long as you get a good quality organic raw product. Much of the hubub concerning it was caused by a competeter

I'm lucky that I've never ever used artificial sweeteners. I tried a diet pop once and it tasted so weird that I felt strongly that something was wrong. I have had a bit of a sweet tooth on and off in my life. Recently I have gone practically off sweets altogether. When I do want a little sweetening, like on buckwheat cereal or oatmeal or fresh grapefruit I usually use stevia. Sometimes I use maple syrup which is my favorite sweetening. I also like raw, unfiltered honey but since I ran out of it I haven't purchased any more because I used to dip into it too much. Not having it has really helped me get off sugar and to start losing again. Sugar and grains are what I have cut out of my diet lately and it's working.
Luckily buckwheat isn't actually a grain--yay! But still...

Here is a great article on splenda from Doctor Mercola http://articles.mercola.com/sites/articles/archive/2009/02/10/New-Study-of-Splenda-Reveals-Shocking-Information-About-Potential-Harmful-Effects.aspx
Yeah splenda is bad too my sister is diabetic and used to use that. Now she uses stevia and carry some with her wherever she goes in case she wants tea or something.
Below is from a study at Duke University
A new Splenda Study put out by Duke University is sure to cause a stir. Adding fuel to the fire was this headline from a press release issued by an organization calling themselves the “Citizens for Health”…
“Chairman of Citizens for Health Declares FDA Should Review Approval of Splenda New Study of Splenda and Sucralose Reveals Shocking New Information About Potential Harmful Effect on Humans”
Duke Study Highlights This 12 week study, conducted in rats fed Splenda-containing “rat chow”, revealed a 50% reduction in “good” bacteria, an increase in intestinal pH, and enhanced expression of enzymes that affect drug metabolism. According to the “Citizens for Health” this study also suggests that Splenda “contributes to increases in body weight.”
Why should we be concerned about “good bacteria?” These beneficial bacteria including those that are commonly referred to as probiotics have been associated with anticancer benefits, cholesterol reduction, and strengthened gut immunity. Having not read the study other than the abstract, it’s difficult for me to figure out how they came to the conclusion Splenda leads to weight gain. I have reported previously that sugar substitutes may short circuit the taste conditioning response leading to increased consumption and weight gain.
It should come as no surprise that an artificial sweetener may have harmful, or potentially harmful effects. Splenda my be the sequel to the transfat story…. and we all know how that turned out.
I will also add this. Splenda is a favorite of many low-carb fans because it cuts calories in processed foods. But the calorie savings can be deceiving.. If you make a muffin with Splenda instead of sugar you can reduce the calories by about 20% . You can also save an equivalent amount of calories by alternatively reducing the fat in a recipe. So yes, you can realize some calorie savings in processed foods by cutting carbs or cutting fat. However, you can’t change the fact that processed foods are very calorie dense. My advice is to stick with real food and limit processed food consumption
So are they truly all bad? I've used Splenda since meeting with a dietician during my pregnancies - I had gestational diabetes and that one was recommended over Sweet and Low and Equal. I don't drink much soda, but I drink a lot of tea...

That is awesome HAWGWILD that you have gotten away from sweets. Good for you!!! I wish I wasn't still addicted to that sweet taste, but at least I can say I DON'T touch any artificial sweeteners and I really can and do enjoy my tea without any sweeteners at all most of the time. It makes me again cringe to think of all the TAB I consumed in my younger years, I just didn't know what I know now! Ignorance is definitely NOT bliss in my opinion! Hopefully my body has healed somewhat from what I did to it back then.

I use stevia, and I seem to have all kinds of alternative sweeteners (natural) in my cupboards. Erythritol, honey, agave, raw cane sugar, brown rice syrup... all kinds. Funny thing is, I rarely use ANY of them anymore. Eating clean, I have really lost my taste for it (and salt). When I make cookies, I use bananas and dates to sweeten a lot. Oh, yeah... I still enjoy the occasional treat. But, I used to be SOOO BAD! I've improved 99.9% in the sweets department for sure. If I had to pick ONE sweetener, it would be stevia for sure... but honey is good also. And I like molasses.
We have switched over from sugar to stevia and like it in all beverages.

Don't touch any of that crap. You can wean yourself off of the sweet stuff. I swear you can. And after a while those same sweet things will hurt your teeth they taste so sweet.
I just read about aspartame last night in the book skinny bitch - I knew it was bad for you but wow the history behind it's approval is very interesting to say the least. It was introduced in the 70s, the FDA rejected it and then in the 80s it was approved for food (or was it beverage?) then in 1996 it was approved without restrictions. I didn't read the article Laura posted so forgive me if I'm repeating what that says.
Whenever I see this I get so angry at the greed that is out there.
It makes the subject of how to sweeten your foods a tough one.
I do sugar over anything artificial but have been tinkering with stevia and agave nectar, but even they have questions surrounding them..
And yes, losing the relationship with my sister and her boys has been more than heartbreaking to me. In many ways I have had to grieve the loss almost as if it has been a death because the person that I knew is gone.

Awful stuff and it is cumulative in the body because the liver cannot break it down once it becomes formaldehyde so all it can do it recycle it to all parts of the body where it is stored.
This is why whenever I am invited to a friends for dinner I am so careful especially about their deserts. A lot of them use stuff that has aspartame in it. You know I try to tell them why I can't eat it and they look at me like I am crazy. Then they change the subject. They really think that the FDA would never let anything on the market that would cause these problems.
If it gets in my body it immediately gives me migraine status headache.
So many people use this stuff and then everyone wonders why there are so many crazys out there. They are destroying the brains. So sad
Than ks for staying on the subject Laura; I totally agree!!

I ordered and watched the Food Matters documentary. It was gripping yet scarey. It really is a "must see".
I tried to drink diet pop and it does really funky stuff to me so I don't. I get shaky, can't focus, hungry for sweets, etc. No thanks, I don't ever want to ingest something that makes me feel that way. I mean I knew it wasn't good for you but I guess I hadn't realized how awful it really is for you!
I haven't seen that site before Foodmatters. I am going to browse around, seems like it has a lot of great information.
Thanks again for sharing.

I also forgot to add... that the use of aspartame is similar in effect to the use of MSG. It causes a degenerative effect of the brain. Brains cells that are not repairable are killed. By the time you notice symptoms (dementia, alzheimer's, etc) the brain is already about 80% gone.

I never touch the stuff and even though my kids aren't 'allergic' to it, I always add it as an allergy in their school food requirements. As school council chair, I never allow artificially sweetened products to be served to the children in our school at council functions.

That stuff can be dangerous and seriously damaging to your health, and yet some people you can't talk out of it.
My sister has lived on a 6-12pk of Diet Mt Dew's daily for more than 10 yrs now. SERIOUSLY!!
She has also been on a ton of medication for all types of psychological conditions. Her husband laughed and said she had a medicine cabinet Elvis would be jealous of and it scared me when she showed me.
I looked up the side effects of aspartame and almost every drug that she was taking was treating a known side effect of that sweetner. I printed out a packet of evidence against the stuff and gave it to her.
My sister and I no longer have any contact with each other (though she lives within walking distance) and my nephews are not allowed to speak to me. Apparently, I am evil.
She will no longer have anything to do with our parents either. She has developed some type of paranoia. AND still we can't get her to quit drinking the crap!!

Aspartame is made of: Made up of aspartic acid (40%), phenylalanine (50%) and methanol (10%)
Formaldehyde A product broken down from aspartate is a known carcinogen and causes retinal damage, birth defects and interferes with DNA replications.
The EPA recommends a consumption limit of 7.8 mg/day. A 1 Liter aspartame sweetened beverage contains about 56 mg of methanol, seven times the EPA limit.
The most common maladies related to methanol poisoning are vision problems including misty vision, progressive contraction of visual fields, blurring of vision, obscuration of vision, retinal damage and blindness.
