I just make it as per directions. We love to put it in our salads. There is several good recipes on Sparks. After the party I am having this weekend, I could get back to you. :) Love the one with feta/greek using the quinoa.

PattK1220, the barley dish sounds GREAT!! Thanks for sharing.
What about roasted or grilled asparagus. drizzle olive oil and salt and pepper. I live on Quinoa. It's a grain. My other favorite is roasted yellow (golden) beats. I will roast several. They make a great salad with balsamic vinegar and goat cheese.

One of my other favorie sides is pearl barley and mushrooms. Gently toast 1 cup of barley in a saucepan with a touch of butter. Add 1.5 cups of hot vegetable or chicken stock and 1.5 cups of boiling water. Bring to boil. Reduce to simmer and cover. Saute 1 small diced yellow onion in oil or butter. Add 8 oz sliced button mushrooms. Saute until tender. Add to barley mixture after it has been cooking about 15 minutes. Resume cooking until barley is cooked, about another 15 minutes.

I love kale. When I was at the grocery today, I bought some Lactinato kale for the first time. This recipe is almost the same as the one I use for traditional kale, so I'm anxious to try it. www.newrootsorganics.com/recipes/Lacinato. html I had Lactinato kale in a salad with black sesame seas and pea pods for lunch Tuesday. It was absolutely delicious! It's not the same flavor/taste as regular kale.

Butternut squash cubes and placed in an ovenproof dish. Drizzle with olive oil, sprinkle with PLENTY of cumin and bake till tender. Shred rocket (meaty tasting green leafy veg) and crushed pecan nuts and lastly feta cheese.
Use portions of each according to what you have allowed yourself. I make this as a meal but it can be made as a side also.

Green Beans with Almond Slivers 1 cup thin green beans 3 shallots, thinly sliced 1 tbsp olive oil 1 tsp cider vinegar 1 tsp maple syrup 1/4 cup slivered almonds
Steam or blanch beans until tender but still firm. Saute shallots in olive oil, vinegar, & maple syrup until translucent. Add almonds & brown slighty; toss with beans.
Okay I am trying to figure up a meal plan for the next month and get things going on a better track. Going through what I'm fixing for dinner I am seriously in need of new vegetable sides! Especially, anything kid friendly that is not rice or pasta!
We regularly eat green beans, broccoli, carrots, zucchini, squash, so looking for something else...
