You know what I did last night? I took some red snapper, dipped it in egg, then in some panko breadcrumbs mixed in with a bit of cornmeal. I put it in a frypan (I know, frying is BAD), and fried it in justy a bit of coconut oil. The snapper only takes a couple of minutes to cook, so you don't need a bunch of oil. YUM!
