Directions for this was in the Clean Eating magazine. Whole Foods had corn on sale and so I wanted to try this out.
1.) Prepare the ears of corn by stripping off the leaves, etc...
2.) Immerse in boiling water for 1-2 minutes.
3.) Quickly submerge ears in an ice bath.
4.) Either chop into the size of corn on the cobs you want and then freeze or...
5.) Using a knife, slice down the cob, removing the kernals. Spread kernals on a paper towel placed on top of a baking sheet so there is a single layer. Place in freezer and let freeze then remove and place in freezer bags.
Very easy! I'm going to do this more often so I can take advantage of sales. The kids are no longer eating corn on the cob so I'll opt for the kernals and that way I can mix them in other things like stews, relish, or just corn!
