Sure! Steviva blend is a blend of stevia and erythritol. Erythritol, like xylitol, is a natural sweetener derived from fruit sugar.
STEVIVA BLEND is twice as sweet as sugar, so you use 1 cup STEVIVA=2 cups sugar.
It is for this reason that it is much easier to use in baking than stevia alone.
I really love the stuff.

I'm working on getting some more recipes into this cookbook, so that will be great if you can come up with a few more. The steviva website also has some recipes (I tried one; that wasn't all that great) but I haven't tried many of them out.

Hi Laura - could you tell me more about what STEVIA BLEND is? How it differs in how you use it in recipes for example?

I thought I would look for it at Whole Foods tomorrow when I do my regular shopping.

I just wanted to mention.... do not confuse STEVIA with STEVIVA BLEND. That is why I always capitalize the STEVIVA BLEND in the recipes. I do NOT want someone mistaking the BLEND for stevia and adding 1/2 cup into a batch of cookies. emoticon The BLEND had erythrtol added and is especially suited to bakinmg as it has some VOLUME to it.... stevia, although very effective at sweetening, doesn't have much in the way of volume. When you take out 1 1/2 cups of sugar out of a recipe and only put back 1/2 -3/4 tsp of stevia you are losing out on almost 1 1/2 cups of VOLUME that the sugar used to take up. So, now you have to put something back in. The STEVIVA partially helps with this problem, as it is 1/2 the volume of sugar. (1/2 cup STEVIVA = 1 cup SUGAR) So, now you need only add a little extra dried fruit, applesauce or rolled oats to the recipe. Healthy stuff!

Everybody's allergic to Splenda; they just don't know it yet!

For those who are interested in cooking with stevia, I have been working on a new cookbook. Stevia can be a little difficult to work with, so I have THROWN OUT a LOT of experiments! LOL! But here are a few recipes that have turned out really good. I have been using this STEVIVA BLEND for baking. LOVE this stuff! (Thanks, ANI!)
