I'm making your fish recipe right now, BLACKANDI. Only I'm using sole instead of cod.
Also, I really LOVE whole wheat pasta! I have also recently just tried SOBA organic buckwheat noodles. They are sooo delicious! But, hey... I grew up eating that sort of thing, so I'm used to that.

I am not a super cook! Ha! No where near it.

I'm just choosing some of the recipes that look good. He has a lot of pasta ones in there too, but I'm afraid to post it with using 100% whole wheat pasta when he calls for regular.

I find that the wheat kind is heavier than the white after it's cooked. I'll post more tomorrow. That cod one sounds really good. I just have to remember to buy small cut, thin pieces. Cod is a really fishy smelling fish...ewwww.

I'm really afraid of working with cod, but this recipe sounds easy enough. I may try it out this weekend. The protein number in the cod is great and better than Tilapia so I need to do this. I'll post some more later on.

OMG, BLACKANDI! This looks YUMMY! ve printed that one out for sure, and I may even make it for dinner tonight (or tomorrow) I already have all the ingredients, except I have a bunch of SOLE in my freezer (that would also make some more room in my freezer)

Italian Crumb-Topping Cod

Ready In: 25 minutes
Makes 4 Servings

1/4 cup fine dry Panco bread crumbs
2 TBSP grated Parm cheese
1 TBSP cornmeal
1 tsp olive oil
1/2 tsp Italian seasoning
1/8 tsp garlic powder
1/8 tsp ground black pepper
4 (3 oz) cod fillets
1 egg white, lightly beaten

1. Preheat oven to 450 degrees F.

2. In a small shallow bowl, stir together the bread crumbs, cheese, cornmeal, oil, Italian seasoning, garlic powder, and pepper; set aside.

3. Coat the rack of a broiling pan with cooking spray. Place the code on the rack, folding under any thin edges of the fillets. Brush with the egg white, then spoon the crumb mixture evenly on top.

4. Bake for 10-12 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.

Mediterranean Lemon Chicken

Ready In: 1 Hour
Makes 6 Servings

1 lemon
2 teaspoons dried oregano
3 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
6 skinless, boneless chicken-breast halves

1. Preheat oven to 425 degrees F

2. Grate the peel from half the lemon, squeeze out the juice (about 1/4 cup) and add to peel with the oregano, garlic, oil, salt and pepper in a 9/13-inch baking dish. Stir until mixed.

3. Coat chicken pieces iwth the lemon mixture and arrange, bone-side up, in the baking dish. Cover dish and bake for 20 minutes. Turn and baste chicken.

4. Reduce heat to 400 degrees F and bake uncovered, basting every 10 minutes, for about 30 more minutes. Serve chicken with pan juices.

OK, team... my freezer is full. I'm hoping some of you will take the reigns and do some cookin' and bakin' and share some recipes with the rest of us!
I cannot, until I eat some of my SUPPLY! LOL!
All this recipe testing has gotten me a freezer full of CLAEN food!
