I just realized I should clarify that what we use is green onion, finely chopped. Although I guess any onion would do...

DH made a great veggie dip using mashed avocado with a little onion, lemon juice, and cilantro - all to taste (so you could use lots of cilantro if you like)! It was really yummy!

Here's 2 dips me and my family enjoy.

Cilantro Yogurt Dip

2 cups plain nonfat yogurt
1/4 cup finely minced cilantro
1/2 teaspoon sea salt

1. Line a large strainer with a coffee filter or paper towel and place over a mixing bowl.
2. Pour in yogurt and let sit until some of the liquid has drained away and the yogurt is the consistency of sour cream, about one hour.
3. Transfer to small mixing bowl; stir in salt and cilantro.

Cilantro Dip

1 large bunch of cilantro
3 green onions, cut into pieces
1 tbsp red wine vinegar
1 tbsp fresh-squeezed lemon juice
2 tbsp olive oil
2 T water
1 tsp hot pepper sauce, or to taste if you like it hot
sea salt to taste

Remove tough stems from cilantro. Rinse and drain.
Mince cilantro and onion.
Transfer to a mixing bowl.
Stir in remaining ingredients.
Taste for seasoning, and add more seasonings as desired.
Serve immediately or refrigerate up to 2 days.

You can add it to plain greek yogurt, or make a mango salso by chopping up mango, red peppers, onions, and cilantro-it is super refreshing and delicious! Not sure how this would be but you could blend up cottage cheese and add cilantro, maybe add some paprika, dill, chives?

You could probably process it with a food processor or blender with sour cream for a dip, or goat cheese for a spread. Add garlic for kick... maybe a few drops of hot sauce? :)
