1 OUNCE GOAT CHEESE
1 TEASPOON PESTO
1 SLICED SUN DRIED TOMATO PACKED IN OIL
1 ARTICHOKE HEART THINLY SLICED
2 TEASPPONS OLIVE OIL
2 CUPS GARDEN SALAD
1/3 CUP CHICK PEAS RINSED AND WELL DRAINED
2 TABLESPPOONS BALSAMIC VINAIGRETTE

HOW TO MAKE
1. BUTTERFLY THE CHICKEN BREAST
2. STUFF IT WITH THE GOAT CHEESE, PESTO, SUN DRIED TOMATO , ARTICHOKE HEART .
3. SAUTE’ THE CHICKEN IN THE OILIVE OIL, 3 TO 4 MINUTES PER SIDE.
4. PLACE ON BAKING SHEET AND COOK AT 375 FOR 10 MINTES IN OVEN.
5. SERVE WITH 2 CUPS GARDEN SALAD, SPRINKLED WITH 1/3 CUP CHICK PEAS AND THE BALSAMIC VINAIGRETTE
