I love a casserole that I can parcel out into individual containers for work lunches. I love just throwing together a bunch of tex-mex flavors.

I did a version of taco salad! Minus the tacos! Spinach, and corn, and meat (I used hamburger, but turkey makes it healthier) & seasoning, and refried beans...mix together, and voilia! It was tasty and healthy; think it was about 350 calories :)

Mexican Bean Salad

This is very easy, it takes only 15 min. to make. It does need to sit, so it's better if you make it in advance. However, it is cheap and easy. My daughter made it and we really like it.

However, if you check SP there are many good bean recipes, some with other ingredients. Choose the one you like best.

I'll try and come back with some other recipes later this week.

We don't want to eat beans all the time!

Funny you should post this. I have just been to the library and got a couple of books to revamp my meal planning to the more healthier side.

1st book: Now Eat This by Rocco Dispirito. All of the recipes are under 350 calories.

2nd book: Eat Naked by Margaret Floyd. This book contains unprocessed food, whole food type recipes.

Don't forget to check out all the recipes here at Sparkpeople. Good luck on your search.



No foods with high fructose corn syrup, sugar, rice syrup, corn syrup, fructose, sucrose etc. in the first three ingredients.

No foods that have more than 3 ingredients that I can not pronounce.

If an item has more than 10 ingredients it is too processed, I will not eat or buy the item.
