I tried to answer with a link about the Paleo Summit which showed all the speakers and topics, but it was removed by Spark. Not sure why as all my Paleo teams have whole topics discussing it.
Anyway, you can just google the name for info. It ended last weekend. : (

My husband's lifestyle is primarily Paleo Diet. It's a much "cleaner" way to eat, for the most part. But that "glue" is really something else. I know we have many preservatives and such in our food, But not disclosing them, is the problem. How can we make appropriate choices, when the information is lacking?

One of my fav cook books, is one from the early 1900's. And yes, comments are made, through out the book, to save those bones, and make stock. I think they had the right idea.

Paleo Summit. when was that LusciousSue?

I watched the Paleo Summit last week on line and noticed that they recommended buying meat with the bones for the minerals.

I have been eating boneless proteins for years now as they were so easy to prepare and serve. But, now with the meat glue info, I think it would be better to go back to bone-in cuts.

You can also save the bones afterwards and make a bone broth which will let more minerals leach out from the bone marrow. I know when I read old, old cookbooks, they usually had recipes using bones. Maybe they weren't just being thrifty but also knew how to get more nutrients out of their foods!

At least one of the 'meat glue" chemicals (Transglutaminase) is also found in yogurts and pasta. It is also used by molecular gastronomy to help create "exciting" dishes. Yes, it isn't a pleasant thing but on the other hand if it helps prevent usable items from going to waste, such as the blood the binder is made from and the chunks of meat that would otherwise have been thrown away it helps with waste. I do think it should be on a label though so that everyone has the option to make a decision.

I had no idea! sometimes it is good to know and other times it may not be.

I love scapple, for instance, even after I knew what it was made of. If I had known, before, I would have thought twice.

I used to love buying boneless chicken breasts on sale, but nowadays I tend to prefer my meat with bones, because I figure I am safe from meat glue that way.

Yes, I have heard of "Meat Glue". I was emailed a clip that was on YouTube. I was so disturbed. I thought the low priced bacon wrapped filet mignon at my local "mega mart" was such a bargain. Then, I realized why ...... because it's "glued" together with scraps from the filet mignon.

I asked the "meat cutters" at my local "mega mart" regarding the use of glue, and all he could say was "I don't know". Well, "I don't know" should not be a sufficient answer for us.

Needless to say, I have stopped buying proteins from my local "mega mart", sent a letter to their headquarters, and have told everyone I love, about the use of "meat glue".

What is really disturbing, is, that "they" are not required to tell you that "meat glue" has been employed. How obscene is that?!!?

I never heard of it. But then while my DH eats lots of meat I don't plus I buy most of the meat from our local butcher who uses local animals and cuts per order.

Yes, it was on ABC national news as a featured story. It is awful!. Even small bits of meat by themselves can be part of a stir fry or other chunky style dish. LABELS should be mandatory and a FDA warning regarding serving eating the "franken- meat" at any level less than well done - to prevent possible food poisoning from the manipulated meat. Also it is obviously NOT kosher or pure if they are using pig blood as the binder.
