I loved the crock pot idea!

Yesterday I got out my crockpot and cooked some chicken with mushrooms. An excellent solution to a record-breaking hot day!

Tonight it's leftovers for supper, either leftover chicken or leftover stuffed eggplant. We have both.

Oh my gosh! 1Mankney - That's my favorite cake in the world. I cannot find a recipe like the one I used to have but mine called for 3 cups shredded zuchini, mini choc chips and pecans/walnuts - is yours anything like that? Would you share it (even if it's not)? Please. Pretty please!

I think I'll invest in a crock pot, it's too hot to turn the oven on. I love my George Foreman grill. I made grilled boneless chicken the other night and put it in caesar salad and then stuffed it in a roll up.

It's so incredibly hot here, the crockpot has been my best friend.
Casserole with ground beef, potatoes, corn and cheese (needed to use up these items)

A small serving is satisfying and keeps me full for quite awhile.

Our garden is supplying us with plenty of zucchini , crookneck squash, and onions. Soon there will be tomatoes. Dinner will use things from the garden. Stuffed zucchini, vegetable lasagna, mixed onion and vegetable saute (use only a little pam). When the tomatoes are ripe I like to serve them stuffed or sliced or in a salad. We have a peach tree, so peaches will be grilled, made into salsa with the onion and zucchini, or sliced and served as dessert. Nothing goes to waste in our house!

tonight I had its a grilled chicken roll...boneless skinless chicken breast..cut it half...seasoned...pounded out and put a little bit of cheese and a few bacon bits..you can put them in the oven or put them in a pan...with a side of green beans :)

The garden tells me that this week will feature zucchini, crookneck squash and onions!

Went to two potlucks this weekend and my contribution to each was a chocolate zucchini cake. I make a 9x13 pan of cake and it contains 3 cups of packed grated zucchini which makes it nice and moist.

My husband made a meal of brown rice, spinach, and kidney beans. I did not really care for it. I added some leftover tomato sauce from yesterday, and I enjoyed it a lot more.

I got home very late and did not want to take time to cook, so I just had a couple of buns with ricotta - one with ricotta and tomato, one with ricotta and romaine.

I had grapes for desert.

I make soft shells w/ re-fried beans, a little cheese, onion & a little salsa or hot sauce. I stick them in the oven for 12-15 min @ 350 degrees.

Every time I rely on Jesus He never lets me down.

We plan to grill chicken sausages which contain spinach and asiago cheese, and I'll fix some mixed veggies (Steam Fresh) to go with them. We are cleaning out the freezer now so tomorrow will be salmon with a salad.
