I guess I'm eating light, too, but it doesn't feel like it. I'm following Eat to Live, and the salad is the meal, based on 5 ounces of greens per serving. That's a LOT of greens.

Today I combined chopped bok choy, a peach, 1/2 c. mixed steamed veggies, mini red peppers, 6 g sliced almonds, and homemade sesame ginger sauce that was made with dates and balsamic vinegar and a small amount of blood orange olive oil from Kalamazoo Olive Co. Very tasty.

And I managed to work in over 8 anti-angiogenic foods. emoticon

Today I made a hamburger on a whole wheat bun, with pickles. It was really good. I made a bunch of hamburgers and froze them so all I have to do is take them out and cook them. It is so easy it is wonderful.

I was really pleased with the way my lunch turned out today! I started with some mixed greens and just a little smattering of balsamic vinigar; then sliced up half a tomato and added that. On top of that I placed some really good leftover salmon from lunch yesterday (from TGI Friday's). There was also just a bit of leftover squash. What a wonderful salmon salad!

1.5 oz jarlesberg cheese (yummy), half an orange bell pepper, an apple, and two flatbread crackers. I sliced the cheese onto the crackers and added bell pepper on one and apple on the other. Loved the combo of jarlesberg, apple and cracker.

I did pretty good for my meal at Golden Corral:

Salad of romaine, tomatoes, onions, peppers, black olives, cranberries, almonds, with fresh orange squeezed over all.

Then a sweet potato and steamed white fish. I squeezed orange juice over the potato and fish. And added almonds to the potato. Delicious!

Back home again, and I'm delighted to be fixing my own food again! The worst was what wasn't available on the trip there and back, partly on old 301, and partly on interstate highways. Don't know what we're coming to. I DID notice produce stands open along 301, though.

Don't have a plan yet. I arrived too late to register and get a schedule. So I have a lunch in the refrigerator if I decide to drive to the beaches for a picnic or to take it up on the roof for a picnic.

And I've checked the menus at the restaurants in the Hyatt. Very impressive healthy choices are available. Think I'd really like to build a salad today. We'll see. Registration is at 8:00 a.m.

I had a big glorious mess consisting of brown rice, soy crumbles, beans, fresh salsa, fajita-style vegetables, a little chili sauce and a blop of soy sour cream. YUM!

My lunch was an instant replay of yesterday. I had made a double portion of stir fry, but decided I couldn't eat the whole thing, so I have today's lunch left over for tomorrow. Same for dinner, and I'm leaving for a convention. I'll have to decide if I can freeze one of the meals, or take it with me.

Hmmm, I used to love school food. And I'd say I was looking forward to institutional food at assisted living. I don't think I feel like that anymore!! Perhaps I've taken charge of my nutrition soon enough so that assisted living is a long way off!!!

Today we had lunch with Garry's mom [my MIL] at the assisted living facility where she lives. She likes it when we have lunch with her in the dining room and today we ordered a basic tossed salad and I smuggled in a container of chopped vegetables and baked tofu and we topped the salad with that and it ended up being a great lunch. We also brought in a big container of cantalope that we shared around.

My lunch today was a stir fry with multigrain bread and almond butter. For dessert, I made a frozen banana sorbet with defrosted raspberries, sprinkled with sliced almonds.
