Ate at the PHO today. A colleague thought it was funny me eating with the those spoons. Tried a dish with much broth. Boy was I clumsy with it.

Ditto on the chopsticks. I'd really lose a lot of weight if I HAD to use them!!

Today I had oats and eggs pizza crackers with hummus and vegetable soup. (all homemade.) Very tasty and quick so I could get to my appointments.

Have a healthy lunch, everyone! Remember our 10 minute Chris Downey challenge. I'll have 10 minutes at the Dr.'s office to walk before hand. Might even finish up my step goal. Don't know if they'l have me on the treadmill since the physical therapist is now focusing on my neck, so I can't count on that workout today.

The pork noodle bowl was delicious with an egg roll sliced up. They are big with their sauces. Some people I have dined with like more of the soup variety, and it comes with bean sprouts, peppers, and limes. I haven't mastered the chop sticks, and can't play chop sticks on the piano either.

Family to Golden Corral where I ate my bland diet with a little step up with the sweet potato. I put my scrambled eggs in the broccoli soup. Pretty tasty.

My sister took me to lunch at Pei Wei. 1st time. I really enjoyed the varied healthy choices. The teriyaki rice bowl with steamed chicken and extra vegetables. We had a nice time sharing and getting to taste lots of different choices. She said their menu had changed recently to include more fresh cooked steamed vegetables!!

Ditto yesterday's salad. I usually do a time saver when I prep for a salad--chop and slice enough for at least 2 meals. So the salad isn't really leftovers, but it WILL be an instant replay.

And it looks like a storm is coming and might rain on my lunch hike. Think I'd better get the hike in before I eat today. If a windy storm soaks me, I'll be ready for a cup of hot soup. (I have a serving of Eat to Live soup in the freezer, so I can warm up.)

George 815, that's your secret to staying slim--eating brown bags?? I don't think I could do it. ; D

I chowed down at my food trough once again for my lunch. That means a salad in a huge bowl: lettuce, spinach, onion, artichoke, black olives, tomatoes, chick peas, red peppers and Eat to Live Avocado/Orange/Banana sauce.

Today I'm having Oats N Eggs N Friends Pizza Crust (leftovers from yesterday's breakfast. My plan is to top 3 pieces with vegan blue cheese sauce from dinner, and chopped tomato, onion, black oiives, asparagus, peppers, and artichoke hearts.

Then the 4th slice will be dessert spread with yogurt and topped with a grated winesap apple mixed with cinnamon. (That's how I ate it for breakfast yesterday.

The plan is to eat once again on the porch but it will need to warm up quite a bit for that to happen. Then I need to move for 10 minutes, probably a walk down to the ponds and back.

The family is going to Golden Corral for lunch today. I used to think that was the worst place for me to get a healthy lunch. Now, the salad bar is great and hot steamed vegetables are plentiful.

The best thing is, I am able to stay away from the dessert bar. I might get an oatmeal raisin cookie or piece of watermelon (or both!!) Depends upon how my activity will affect my calorie in level.

It might be rainy all day. That won't keep me out of the pool, as long as the lightning stays away.

I can still remember a time when my menu choices had nothing to do with the degree to which I was glued to my recliner.

I fall back on Xtreme Wellness wraps for lunch and snacks. Today, I made a delicious wrap with remoulade sauce, shredded lettuce, hummus, and leftover stir-fry. (mushrooms, cabbage, onion, smoked sun-dried tomato strips, paprika. And everything I put on the wrap was using up leftovers. I'm staying away from dairy right now, but some cheese would have been great on this today.

If I were taking this to work, I'd pack the wrap spread/filling in a container and roll up the wrap and seal in a sandwich bag until lunchtime when I'd add the filling.

I spent the morning with Mom at the emergency room. (she's ok--not admitted) So when I got home, I didn't feel like fixing dinner, so I threw together bits and pieces to make a delicious salad of

spinach, romaine, edamame, pear, walnuts, and dressing of avocado, banana, orange, ginger, and balsamic vinegar. It was worthy of an entree listing at a gourmet restaurant, if I say so myself!!

I made a vegetarian chili. I usually wait until November to do that, but it was delicious and I enjoyed it as if it were 20 degrees outside.

Maybe that's the secret to surviving our hot summers. Live AS IF it were winter in all but the wearing of layers.

My last salad was redeemed today for lunch. Some would say it was a weird combination but I found it delightfully tasty (and healthy).

So here are the ingredients:

fresh spinach, chopped tomato and green onions, alfalfa sprouts, chilled steamed broccoli florets,sliced zucchini, leftover roasted chicken, tempeh grilled in maple balsamic vinegar, kale krunch.

I'm following a meal plan my trainer gave me, so this week, lunch will include half a whole wheat pita, spinach, avocado, tomatoes, italian dressing, and a veggie burger!

Well, I ate it but wasn't happy. I started out to make a nice salad with the plan of adding chunks of chicken. My chicken disappeared, and I substituted hickory smoked tuna. Big mistake. It was way too strong for the apple and balsamic direction I had gone. Luckly I wasn't real hungry!!

Guess what I cooked for supper?




8 chicken breasts. I will NOT have this problem in the near future!!

I guess I'm eating light, too, but it doesn't feel like it. I'm following Eat to Live, and the salad is the meal, based on 5 ounces of greens per serving. That's a LOT of greens.

Today I combined chopped bok choy, a peach, 1/2 c. mixed steamed veggies, mini red peppers, 6 g sliced almonds, and homemade sesame ginger sauce that was made with dates and balsamic vinegar and a small amount of blood orange olive oil from Kalamazoo Olive Co. Very tasty.

And I managed to work in over 8 anti-angiogenic foods. emoticon

I made a salad with organic greens and veggies. That is all I had for today. Tonight I'm having fish for dinner. I'm making this week a very light week for eating.

Today I made a hamburger on a whole wheat bun, with pickles. It was really good. I made a bunch of hamburgers and froze them so all I have to do is take them out and cook them. It is so easy it is wonderful.

Low carb weight sandwich. Cut up some baby zucchini and had an apple. Great numbers for my lunch tracking though.

I was really pleased with the way my lunch turned out today! I started with some mixed greens and just a little smattering of balsamic vinigar; then sliced up half a tomato and added that. On top of that I placed some really good leftover salmon from lunch yesterday (from TGI Friday's). There was also just a bit of leftover squash. What a wonderful salmon salad!
