Today I had a salad of halved cherry tomatoes, sliced mozarella cheese, and chopped fresh basil from my garden with pepper and balsamic vinegar sprinkled on top.

I love cold bean or grain salads (I'm a vegetarian, so I eat lots of legumes for my protein) but some days I'll just pack a ton of fruit for lunch. Yesterday it was Bing cherries, Bing cherries, and more Bing cherries. If I'll be out of work after 5 pm, I need a little fat and protein to keep from getting hungry - a couple slices of cheese, peanut butter, or nuts and I'm good to go. And the prep time is just nonexistent. Tomorrow I'm taking a little spinach curry (to eat hot) and a bunch of celery and PB2 - I love that stuff!

i love making a cottage cheese salad in the summer. Cottage cheese, lettuce, sweetcorn, green peppers, grape tomatoes, cucumbers, spinach and mix. Light, low in calories, high in protein and can be used as a side dish aswell.

I do low salt tuna packed in water, drained. Mixed with a couple of tablespoons of fat free poppy seed dressing, (that is in place of the mayo). I do it on the Wasa or Ryvita products, you can top it with a couple of slices of tomatoes and cucumbers. Fruit and carrot sticks. Not a bad lunch I think it comes in under 250 calories.

Watching salt intake also trying not to buy foods that have high fructose corn syrup, sugar, rice syrup, corn syrup, fructose, sucrose etc. in the first three ingredients.

No foods that have more than 3 ingredients that I can not pronounce.

If an item has more than 10 ingredients I put it on the Do Not Buy List as it is too processed.

Any one have any suggestions for lught and healthy lunches for spring and summer. I love salads but what to try some new ones. All suggestions are welcome. Thanks.
