Some foods taste better as leftovers. For instant, last night I had a red onion, cucumber and tomato salad with a vinegar and oil dressing. It was really good, but today it was even better having set and marinated for another day.

I made a pizza last week and had left over pizza sausage. So I made pizza burgers on whole wheat buns the other day for dinner. They were great.

Rice is one food I cook a lot of and use it several times through the week for curry,stir fry with vegetables,I sometimes use it in place of macaroni( Rice & cheese) I do not like potatoes,I only use them when I have company for lunch or dinner.

I do the same thing. I try to use everything and not throw anything out. It really works. I made fried potatoes with onions one day and for leftovers the next we put cheese on them. Also made eggs with them. It was great.

I try to use everything that is left over from meals . do not know where i learned that but have been doing it for years . what was dinner today can remake into another dish tomorrow . they may not even know they are eating leftovers

I do alot with leftovers as well. Tomorrow for work I'm taking carrots and celery sticks with hummus and berries. I love this time of year. Actually got tomato plants, pepper plant and a cucumber plant. They are in their pots and growing. I'm excited.

today no one was here for lunch .not even me . my granddaughter was 21 today . so she wanted to go to local place called smokey bones . we went i had a bbq chicken salad no dressing . came home hubby still wasn't here so i didnt fix dinner . emoticon emoticon emoticon emoticon

I do a lot of leftovers too. today I'm having chicken and noodles made with breast meat only. I always bring some snacks every day like a cheese stick, pretzels, carrot sticks, and yogurt.

today i brought a PB&J sandwich on light wheat bread, FF cottage cheese and peaches (drained the syrup from them), grapes, an egg, carrots and yogurt. I will most definitely NOT eat all of this, but I might munch on the grapes or carrots as snacks to keep that blood sugar flowing! mmmm sounds yummy

I love leftovers for lunch because if they're from a dinner that I made, I know it's healthy.
I also like a sandwich every so often and if I do that, I'll add applesauce, banana, cottage cheese, hard boiled egg, fruit (grapes, strawberries, raisins). If i do not do a sandwich (which usually has a slice of regular american cheese), then I will have soup- love progresso...yes high is sodium, but low calorie and I drink a TON of water so I don't see the sodium as that big of an issue.

I also like to add string cheese, low-fat triscuits, pretzles, quaker oats rice cake minis, carrot or celery sticks (on of my favs!) and without dressing, yogurt...yogurt is a big one! Just eat it slowly and pair it with some other high protein foods.

If all else fails, I keep a couple of emergency lean pockes in the freezer at work. I cannot eat one alone, so I will bring some of the snacks mentioned above. I just ate, but this all sounds YUMMY!

This has been great. Thanks to you I have some new ideas for lunches. I'm trying to do salads, fruit, and I found these Deli Flats that are wonderful and use them for sandwiches.

I usually end up with leftovers from the night before. Today was rice, kidney beans, broccoli, cauliflower, corn, green chili and 2 oz chicken.

I don't have a lot of money so it's hard to do things that are good for my body that are also gentle on my wallet! But I do a pretty good job thanks to the proximity of a discount grocery outlet.

It's the kind of place where you never know what you'll find. I get to try new things and get a lot of variety.

I had a light lunch the last two days, had more calories with this lunch and will go back to the light lunches again to see if I can get the scale to move. It seems to be stuck!

I've been eating 3oz chicken breast and a 1 1/2 cups of whatever veggie is handy this week. I don't think I want that tomorrow, but then I have to figure out what I do want. I'm drawing a blank . . .

I had high fiber pasta, chicken and tons of veggies for lunch today. I followed it with a probiotic yogurt with flaxseed mixed in. (I'm trying flaxseed in different things, not always a success)

Hi everyone! I've been eating turkey sandwiches with muenster cheese on some days, and tuna sandwiches on others. I find that when I put a slice of full fat, or reduced fat cheese on my sandwiches, I stay full much longer. I also have a gala apple with my lunch and that really hits the spot!

I get into lunch ruts too - but in my case I like it. I've been eating an egg in an alternative pita every day for three weeks. My fiance, on the other hand, can't stand eating the same thing twice in a row. It's so very annoying. I'm not good at NOT cooking leftovers, but he won't eat them!

I do grapes and fruit a lot and veggies. Sometimes I'll take some nuts and 3 ozs of dark chocolate. I work 10-12 hours a day as well. That is why I cook over the week-end. I love to cook. I do wraps with tuna and cheese. They are great. I use whole wheat wraps.

I'm a huge fan of leftovers. If you have access to a micro-wave for lunch, I can't think of anything better.
Especially in winter, something nice and warm just seems to "stick to the ribs" better than just a sandwich or salad, even if the calorie count is similar.

My favorite snack is 1/2 cup of 0% fat Greek yogurt (Fage brand) topped with 7 crushed walnut halves and drizzled with 1 tsp of honey. 145 calories, loaded with calcium and protein, those good for the tummy probiotics, and omega 3 fats from the walnuts. And absolutely, decadently delicious. I actually prefer this to ice cream.

I've recently realized that deli meat sandwiches do not keep me full so I've been taking tuna salad sandwiches with cheese for lunch. I also eat a large gala apple and that seems to do the trick.

It is a bit sad that we are so busy that we have to cook on weekends, but if it makes life easier then I am for it. This weekend I'll try...I really cannot see a down side. For years I have not liked Thursdays...I might be at work and thinking, wow, I really don't feel like cooking tonight...only to find out that it is Thursday. Now I always try to have something easy and healthy ready for emergency Thursdays. I would like to make eating out a true event...not just grabbing food cause I am hungry.
And...I take several snacks with me to work. I often work 10-12 hour days...and I never really know how hungry I might get. Mine are pretty standard...yogurt, fruit, mini microwave popcorn bags. But I am interested in new ideas!

I agree I do a lot of cooking over the week-end and have left overs for lunch and during the week for dinner. With a busy schedule it helps. We need to keep this going. I bet if we think about it we could come up with some great snack ideas as well.

I am big on freezing leftovers. Especially because some mornings are so hectic. I put them in individual containers and pull them out when I don't have time to pack lunch. When I do have time, it's usually wraps,with either hummus or turkey, low fat cheese and veggies and a fruit on the side.

There are only 2 of us at home and I cook for 4 so that leftovers are there for hubby. I still do the soup/sandwich or salad for lunch.

Hi...I am new here and thought I'd join in. I hate packing lunches, but since joining SP I have not missed a day of taking my lunch. I've discovered that I really don't like "lunch" foods...you know, how some people don't like breakfast foods? So I have been cooking extra for dinner...even if it is cauliflower... emoticon ...and setting it aside right then. If I need a piece of fruit...or a yogurt it is easy to add. I am actually amazed at how easy this has been. And I do know that 5 weeks does not, necessarily a new habit make! But this seems to be working and I am not raiding the vending machines...or searching for food.
Does anyone cook on the weekend...to freeze or purposely have left-overs? I think this might work for me also.

Yes, I found that out - after eating cauliflower, broccoli and brussel sprouts for years! My thyroid was removed almost 4 years ago - so I don't think these veggies matter any more.

I read a while ago that if you regularly eat these things that the medicine level prescribed will even things out. But I don't know if that's true or not.

Liz - I have seen you on the Thyroid boards also. Do you know that you should not be eating Cauliflower that often. It has a tendency to interfere with thyroid function.

I'm having left beef vegetable soup, some waxed bean and apple slices baked with cinnamon.

I cook a lot in the crock pot and the freeze the leftovers in 1 cup containers for my lunches.

Something you can do with the cauliflower is boil it until very soft. Then mash it up to look like rice and add some salsa to it. This is a variation of an old Weight Watchers recipe when you weren't allowed to have rice or pasta on the program.

I didn't put weight on overnight and it won't come off overnight either.

I made turkey tacos the other day and for lunch tomorrow I am taking the left overs. I also made some soup and will have that one day for lunch as well. I like to change things every day. We should keep this going. I think we will all think of other suggestions to help each other.

I agree that it's easier to cook for a larger group than for just one or two! I varied the meals much more for a group. I'm FINALLY learning to cook for just the two of us, but it's much harder. How did I do it so easily before the kids?

My problem is that I really like having the same thing over and over again. Chicken breast, broccoli or cauliflower, maybe a bit of rice or salad. My poor hubby likes variety though! He spent a month in the hospital - during which time I loaded the freezer with veggies - broccoli & cauliflower - when he asked for asparagus or green beans I couldn't find any!!!! Oh dear! He's so sick of cauliflower now - I don't know when I'll be able to make it again! LOL

If I am going to be out, I just automate my lunch. I usually have a sandwich or pita pocket, baby carrots, a piece of fruit and some type of salty snack. If I don't eat it at lunch, I'll have it later for a snack.

I find that lunch is harder to do within the limits of my rerigerator . I have purchased special luncheon things but they really do not work out for me . at times i use leftovers from dinner yesterday to help me balance the budget and use up things that normally do not make a full meal . with just my hubby and myself and only having to cook for two it makes a difference with the amount of food that must be placed upon the table . no less boring . used to cook for all six of my grandchildren . love to do that . seems easier some how to cook for a larger group of people then just two . need new ideas. emoticon emoticon emoticon emoticon emoticon emoticon emoticon

I think we need to think of ways we can help each other. I joined this group to get some new ideas for lunch, and help each other on our road to success. So I thought if we all talk more about what we are doing, eating, etc., that maybe that would spark interest again. What do you think?
