About that soup! Don't throw away your roast chicken or turkey. Break the bones apart, cover them with water, & simmer until the rest of the meat falls off the bones. Strain the broth, chill, & skim off the fat. Use the broth to make soup of your choice, and take off the rest of the meat to use in the soup or for sandwiches. Low-fat & lots better than canned chicken broth!!!
Campbell Select soups are great, tons of flavors, & cheap. They even have "light" versions that taste good. I also noticed that Progresso has some new "high fiber" soup options. I am not sure about the salt content, as that is not something I track.

They have really good, healthy soup recioes in the SP recipes! Anyone wanting soup on these cold days (and nights) they are right at your fingertips! Great for leftover lunches the nest day, too. I've not been disappointed yet!
I am looking at quick and easy as the morning routine is always pressured. It has to taste good too or else I will forget about it and find myself working through lunch again. I like meat loaf, it has a comfort quality about it. I think I will made a batch of spagetti with rice noodles tonight and try splitting that into smaller containers for the week.
This is a new year and with that I have decided to really keep working hard and succeed. I've also decided to try new things for lunch so that I can still eat healthy, but change things and have a variety. I'm making soup so that I can take some to lunch, made a meatloaf and that will be great cold. Any other suggestions lets see what we can do this year.
