I do the crock pot a lot and make some great meals. I also make meatloaf and the leftovers I have to lunch and supper. Also, make a lot of stir fry and again the leftovers are either great for lunch and/or dinner again.

Yes!! I started it about a year ago...but kinda fell off the wagon! I'm trying to get back on! Thanks for the crock pot advice...I do not have one, but am sure I will be getting one very soon! Thank you!

I share your "problem". Cooking for one is a challenge/chore, however I've been getting re-acquainted with my (small)crock pot this fall and I love it! Cooking "fresh" is much healthier as well as tastier. After a meal is prepared in the crock pot it can be put into containers for freezing or refrigerating and ready at a moments notice. Last week I had out of town visitors and made "Chicken Noodle" & "Navy Bean" & "Clam Chowder soups. My guests thought I'd spent a lot of time in the kitchen and I didn't!! Maybe 40 minutes max!~! AND...everything is in 1 pot, so very easy to clean up afterwards.

I just recently got out of an engagement, and I have a place of my own. I am not used to meals for one. I live about 5 minutes away from the office, so I have the option of going home each day. I am so tired of boring sandwiches and plain old soup! HELP!!
