how about Hummus? i always make up some with different ingredients.

also how about mini pizzas. i use pita bread and different toppings. bake in convection oven for 10 minutes and it is ready.

i also make an egg beaters many different ways in micro - put in pita and love it. i usually make enough for 2 meals.

haven't posted for a while busy with apptmts. and shopping for items to replace damaged or whatever. spent 2 days shopping for these odd bulbs in my desk lamps.

lunch is always a difficult meal, i usually snack on little things.

maybe we should change the title to 'what are you making for dinner' - then leftovers would be great.

we had this on a seniornet discussion group and it was fun. everyone told about sale items - how they cook etc. unfortunately seniornet discontinued the discussion forum.

just make sure you have a good breakfast, lots of veggies for dinner. sometimes, i have part of my dinner for lunch then i can add additional veggies at nite. just a thought.

I'm sorry to hear about your engagement. In my opinion, any meal can be made for 1, you just have to decrease the amount of each ingredient..

How about chicken, cooked in olive oil, herbs w/some whole wheat pasta or w/a salad. I usually do it w/mashed potatoes but I'm not really sure how healthy those are.. Unfortunately, I tend to cook big batches. I come from a family of 6 and am used to that and just having leftovers. You could always do that too, make a lot and save what you don't use and alternate..

TRY A BEAN DIP WITH SOME CILANTRO LIME AND SOME SALSA AND EITHER PUT IT WITH CHIPS OR ON A TORTIA emoticon YUM YUM YUM

i also love einsteen and the way he got his ideas I love to travel on the spur of the moment and i love portland oregon, hawaii. I enjoy all forms of art and the galleries

I just recently got out of an engagement, and I have a place of my own. I am not used to meals for one. I live about 5 minutes away from the office, so I have the option of going home each day. I am so tired of boring sandwiches and plain old soup! HELP!!
