I'm sorry to hear about your engagement. In my opinion, any meal can be made for 1, you just have to decrease the amount of each ingredient..
How about chicken, cooked in olive oil, herbs w/some whole wheat pasta or w/a salad. I usually do it w/mashed potatoes but I'm not really sure how healthy those are.. Unfortunately, I tend to cook big batches. I come from a family of 6 and am used to that and just having leftovers. You could always do that too, make a lot and save what you don't use and alternate..
