I love to make stews! I make a apple chicken stew that is delicious, beef stew, lentil soup, chicken noodle soup, chili etc. I freeze any leftovers that won't be eaten in individual dishes so I can just take it out and unthaw for lunch or a quick dinner. If you freeze chili don't add the noodles before freezing. Just add a small bag of uncooked noodles taped to the bowl when freeze. just add it to the chili and heat until the noodles are cooked and enjoy. Another lunch I just love is a salad with some chopped apples or pears, a small handful of craisins and toasted pecans. Just delicious!

Taco soup is a good one. Ive seen some chicken & dumplin recipes on this site too. Also, chicken noodle soup.
BTW...I have chili in the crockpot for dinner too...yummy!! :)

I love to make tortilla soup in the crock pot... chicken broth, tomato sauce, 2 cans diced tomatoes, 2 cans black beans (rinsed), frozen corn, taco seasoning and a few dashes of hot sauce. You can make it thick or add more broth to make it thinner. My husband likes it thicker. Garnish with avocado, sour cream, cheese, tortilla chips... yummy!!!

Lentil soup, split pea soup - both great when the air gets crisp!

Yeah, I am always looking for ideas. I live alone and have a hard time cooking for myself; lunch or dinner. Healthy must be the keyword. Also on a budget. My freezer is tiny. I only get to the grocery store about twice a month. So planning and cooking healthy meals is a challenge.

This is a great time of year. It is very cold here but refreshing. I made a pot of chili and plan to take some of that to work for lunch. Any one have any other great ideas for this time of year. I do alot of salads, but would like to do other things. I do eat at my desk all the time. Any suggestions would be appreciated.
