My favourite lunch is a chicken & broccoli slaw wrap with a little mustard on a whole grain tortilla. I also cut up some strawberries and an apricot into chunks to fill half the plate. Very yummy!

When it's really hot, I love to have fresh pineapple, cantaloupe, watermelon - well, just about any fresh fruit - for lunch. Refreshing and helps keep me hydrated. I put an ounce of cheese, a serving of cottage cheese, or some peanut butter on whole wheat with it to get in my protein.

One of my favorites is to take spring mix lettuce, diced chicken, glazed walnuts and a vinagrette dressing and crumble gargonzola or feta cheese on it. YUM YUM.

Wish I'd have done that today. I just tasted the new dressing on some celery sticks and I brought to go on my salad today and yucko! I think I may borrow the company car and run to the store for a better dressing....

I'm not a big salad fan usually but lately I love mixed greens with Feta, walnuts, and chicken. I usually use just balsamic vinegar on it. I've added chickpeas before and you can throw more veggies on there. Its really satisfying. Just be careful how much feta and walnuts you use. They are good for you in moderation!

I love the idea of tuna and avocado - yum!!

I'm all about the classic PB&J on whole wheat bread. It's got sugar, but you could eat worse! I love it with a banana and some berries on the side.

And avoid mayo at all cost. For so many reasons. 1) It's gross (ok, so that's just my opinion). 2) Mayo plus heat = illness. 3) It's SO BAD for you!! I love people's suggestions of using hummus. Also - mustard is a great alternative.

Love,
Hillary

Today my cold lunch was my version of Arby's chicken salad. Baked chicken breast, chopped, green grapes halved, chopped apples, and light mayo. (I find the extra calories of the light worth the creaminess you loose in the fat free). Put that on flatout breat with a lettuce leaf, had a side of grapes. YUM.

Two wrap ideas:

1. WW wrap (or tortilla) spread with fat-free refried beans and either some fat-free shredded cheese or a slice of fat-free Kraft American. Microwave the night before to melt the cheese, refrigerate, and eat at room temp the next day. This is one of my 'go to' lunches when I'm in a rush. I have a microwave at work and so can prepare it and nuke it at lunchtime - I prefer it warm but my kids are fine with it unheated. Add salsa if you like.

2. This takes preparation - grill some peppers and remove the skin. WW wrap with turkey, mustard, and roast peppers is delicious.

I love to make wraps with the flat out bread that is 100 cal and 8-9 gr fiber each wrap, low in fat. They are great with chicken, lettuce, tomato, and a bit of feta cheese. A side of fruit and you've got it made!

I just found this yum turkey from the market. Its a peppered turkey breast. I usually just roll that up and eat it with some sliced peppers on the side or another veggie. Something else that is amazing and so low in fat is laughing cow cheeses. They come in pre packaged little triangles and are only like 40 cal. each. you can get them in different flavors, swiss, herb, french onion, they arent too over bearing and are delicious spread on veggies or a pita with the turkey! YUM!

Pretty much all of my lunch goes in the fridge. I usually have a salad as my base and add different stuff to it everyday leftover chicken, garbanzo beans(yum!) tuna fish, sunflower seeds. It keeps me looking forward to it. Then I have cottage cheese with cinnamon, greek yogurt, and some fruit.

I take a cold lunch to work every day also! Some ideas would be egg salad sandwiches. You can make them with plain yogurt so they are healthier! Cottage Cheese, cheese and crackers, fruits and veggies are also a great filler. Another thing I take as a treat is pudding cups.. I often will dip pretzels in them to help fill me up! Hope this helps.

I'm a finger-food kinda girl. I cut up left over meat from dinner (I cook extra so I have left over) and then will have veggies or fruit. I'm a high protein eater so I will do 6oz of protein and 2oz of good carb.

Another favorite is sliced apple and peanut butter. I like to sprinkle cinnamon on the apples to jazz it up a little.

Mash or slice a banana with low fat ricotta cheese and have with melba toast.

If you have an ice chest try cucumber slices and celery topped with your favorite tuna, chicken or egg salad. If you want to stay away from the Mayo use the earlier idea and make it with avocado instead of mayo. You can make several differant kinds for variety - should last for several days in your fridge at home. These salads are also grea with lettuce wraps instead of bread!

My favorite is half a whole wheat pita with your pick of veggies (I normally do mixed salad greens, broccoli, carrots and black olives), a light salad dressing, and a chopped meat. Wal Mart sells a Tyson pre-cooked, pre-chopped chicken so you don't have to worry about cooking or dicing, just put it in the pita!

I do what the others do with fruit juice and water. I also cut up apple or seedless grapes. I usually just give a sadwich during the day and food at night. HO?WEVER if I for lunch if I want to give them food in the day the I get up 30 minutes earlier, boil some pasta grate a little cheese on it and throw some tinned sausage on it with a tomato cut up in a seperate container. Or I throw the rice cooker on while we get ready then throw a tin of peas and carrots in it with a tin of tuna and mix it all up.

Two quick meals that give them protein, veg and carbs. But no mayo since that goes bad. They eat by 11.30 so 3 hr in an insulated bag is fine.

1 can tuna in water, drained.
mix with 1 tbs low fat italian dressing, 1-2 tbs shredded carrots, and a tsp crushed walnuts. can add some diced onions if you'd like too.
spread on wholegrain bread. and pair with a fruit of your choice. its great for a high protien, high fiber, low fat meal!

some lunch ideas that I have are melba toasts with cheese and cucumber...I also like melba toast or wasi bread(I think it is called) it is flat and thin ...anyway I like that bread with yogurt and fruit on it too...I also make salads...they are always different to switch things up...I use strawberrys, blueberries, raspberries, mandrian oranges, pineapple, basically any fruit and then I add nuts such as pumpkin seeds, almonds, peacans. I also add dried cranberries. I like to use kraft raspberry vinigerette, poppyseed, or mandarin chicken.

I also have put thinly cut steak, salmon or chicken in my salads.

I basically cut and go with whatever is in my house and flavors I may be craving...hope this helps.

The key is to plan and prepare. Plan your week out, shop in advance, separate food into portions, and it will make putting lunch together much easier.I mix it up all the time. Homemade vegetable soup in a thermos bottle, smoked kippers, low fat crackers, mixed green salad with just cider vinegar & sugar for dressing was this week's favorite. You can pack it into a small cooler wtih blue ice and it will keep everything cold. I also packed pickles & olives for one snack, and peanut butter with a pear or apple the same days. So much more variety now with SP ideas. Now I think thru lots of choices like pitas, mini bagels, tortilla wraps, whole grain rolls - not just bread for sandwiches. Instead of potato chips it's cucumber slices, baby carrots, bell pepper strips, and pretzels. Cold beet borscht this time of year is good, and you can either drink/eat it plain or with lite sour cream - if you can handle dairy. It you normally use the imitation stuff, blend it at home first but be sure to double wrap the container in plastic bags because most vegetable juices can stain. And leftovers of many kind like meatloaf or chicken are often just as good served cold, or buy some containers to keep food hot.

I find salads sometimes really boring, so I make them without lettuce and pack them with cucumbers, cherry tomatoes, mushrooms, carrots, peppers, pickles, and some left over baked chicken. I also substitute dressing for some chunky salsa.

grain salads, and bean salads are great for taking for lunch -- they hold up well and are filling. I had a sun dried tomato and wild rice salad today and yesterday had marinated vegetable salad -- here is the recipe recipes.sparkpeople.com/recipe-detail.asp?

I like to drain and flake a can of tuna, then mix in the mashed pulp of an avocado, some chopped celery, chopped red onion, chopped green bell pepper, and sometimes some chopped carrots. Actually, I'm saying "chopped" but "minced" would be more accurate, because I cut them into pretty small pieces. Mix it all together and it can be used on whole wheat for sandwiches, stuffed into a pita, or smeared on a tortilla for a wrap. When I do the wrap, I usually line the tortilla with romaine leaves, then add the tuna mixture.

I season mine with garlic powder and ground black pepper, but you could also go the Southwestern route by adding chile powder, cumin, etc. You could even throw in some jalapenos or chile peppers if you really want to kick it up.

Add a piece of fruit and a big bottle of water to
round out the meal.

One large can of tuna and one avocado (plus the additions) makes enough for 3 or 4 sandwiches, pitas or wraps.

An advantage to this recipe is that it takes the mayo out of the mix - and remember that foods containing mayo that are not well-refrigerated can breed Salmonella.

Write on!

I enjoy the Veggie Delight Sandwich from Subway, so I actually make my own by buying the veggies I like and cutting them up for sandwiches on a whole wheat or ezekial bread and the other half I will cook and use as dinner sides.

One of my favorite cold lunches is a bagged salad mix, sometimes with spinach, then add bite size grilled chicken breast pieces, and ff raspberry viniagrette
for variety you could also add dried cranberries, nuts, seeds, etc

I'm a big fan of cucumber and tomato salad... just slice them up, add a little vinegar (I like apple cider vinegar best), a cut-up slice of onion, and some salt, pepper, and paprika. If you need a little more fat for the day add some olive oil, if you're looking for carbs throw in some pasta, and if you need protein add a little grilled chicken. I generally make it the night before so it has a little time to sit. It keeps really well, so you can make a bunch and keep it in the fridge at home for a few days, and it's super refreshing on a hot day - especially if you're spending time outside!

Hi Alexis and welcome!

I often make some pasta in the evening and add a little pesto & chopped veggies (cucumber, tomatoes, sweet peppers, onion). It's delicious cold. Yum.

I love a veggie packed tossed salad. I add cukes, cherry tomatoes, purple onion, yellow peppers grated carrots, diced celery, sunflower seeds, raisins, a diced hard boiled egg, raspberry vinaigrette.

Life may not be the party we hoped for, but while we are here we might as well dance. Remember Dance like no one is watching!!

I love veggie burgers on english muffins - I cook/toast the stuff the night before. I include a veggie of some sort, a salad or green beans with curry powder, or any leftover veggie that I like cold. I also include some salsa to either put on the veggie burger or have on the side. For dessert I have a cup of grapes, strawberries or an apple. I actually have this lunch already packed & ready for tomorrow! Hope this helps!

Hiya! My name is Alexis, I'm 27 and currently reside in Little Rock, AR. On June 15, my company's summer program starts. It's a 7 week, intensive, therapeutic program for at-risk children. I'm a school-based Social Worker and spend the day doing group and individual therapy. My lunch break is spent with the kids, so my lunch has to be quick! No microwave, no stove, etc. Any suggestions are great!! Thanks in advance!!
