My response to Ceejay was realistically even though South Beach is based on low fat, we as individuals have to figure out what we need. Some folks do very low carb and you can't do super low carb AND do low fat. So when you are in phase 1.5/2 (versus phase 1), you may find more leeway on the fats, as long as healthy fats.

The 2 tbsps is in reference to this:

FATS/OILS

Up to 2 Tbsp. of the following fats or oils are allowed daily.
Monounsaturated oils are particularly recommended.

Monounsaturated Oils
canola
olive (particularly extra-virgin)

(Polyunsaturated Oils or a blend of Monounsaturated and Polyunsaturated
Corn
Flaxseed
Grapeseed
Peanut
Safflower
Sesame
Soybean
Sunflower
Other Fat Choices:
Avocado - 1/3 whole = 1 TBS oil
Guacamole - 1/2 cup = 1 TBS oil
Margarine - Trans Fat Free 2 TBS
Mayonnaise - Regular - 1 TBS
Mayonnaise - Low Fat - 2 TBS (avoid varieties made with high fructose corn syrup)
Olives (Green or Ripe) 15 = 1/2 TBS oil
Salad Dressing - 2 TBS. Use those that contain 3 grams of sugar or less per 2 TBS. Best choices contain canola or olive oil. Low carb salad dressings may also be used if they meet these guidelines.
TRANS FAT FREE Spreads 2 TBSP.

I have been going over my fats. I marinate my meat in olive oil, i eat avocado on occasion and i add a little butter to my steam veggies. I know this is over 2tbl a day

Two slices of bread is two servings of grains unless it is sandwich thins. Common mistake for folks is not to pay attention to the size/weight of the breads. Also it is very common to initially show a slight weight gain when adding in back foods (carbs in general) but it settles back down so no panic.

I was a little bummed today because I was up 1 lb. after eating multi-grain bread
(2 slices /100 calories each) for the past two days. I think I will do no carbs and only strawberries today.

First - cheese stalls so beware. Some folks can tolerate more than one serving. Others - not so much. Nuts - still stays at one serving because nuts stall.

Fats - technically SB is a Low Fat diet. Ie - within spark's guidelines. That being said - some folks who need the lower carb also need the higher fat. You kinda need to figure out your sweet spot on that one. If you are needing really low carb then you definitely need higher fat. Personally I rotate in higher fat days - I just haven't been able to hit a higher fat number on a consistent basis. I quit focusing on lower fat cheeses and I do things that are on the more paleo/primal/atkins level - ie do coconut oil/butter/heavy cream. I still do nonfat yogurt. I figured out a plan I could eat for a lifetime and still maintain and/or lose on.
