this is totally awesome! I just made this from the southbeach friends website:
Microwave Flax Muffin From South Beach Friends Wiki Jump to: navigation, search Microwave Flax Muffin Serves: 1 - 2 T. flaxseed meal - 2 T. vanilla whey protein powder (no sugar added) - 1 egg white (or 1 whole egg, if desired) - 1 t. vanilla - 2-4 T. skim milk (or sugar free syrup, like DaVinci) - 1-2 packets splenda - or as desired - ¼ t. baking powder
Blueberry Spice (almost Phase 1 - includes very few berries) - 3-6 small wild blueberries (fresh or frozen) - dash cinnamon - dash nutmeg (optional)
Beat the egg white (or egg) very well. Mix in flaxseed meal, protein powder, vanilla, milk, splenda, and baking powder. Whisk well. Add in other ingredients as desired. Microwave on high for 30 seconds to 1 minute (or longer, depending on the microwave). You want it done but still soft so be careful.
This is delicious and quick. I didn't have vanilla whey I used Chocolate soy protein, and I used 1 whole egg and added cinnamon..2 minutes in micowave just delicious.. and quick!!!
