Tapioca starch in place of the corn starch, if you have corn allergy, but you don't really NEED either one-the starch serves as a moisture inhibitor.
If you plan to use the baking powder within a reasonable time, you can leave out the starch and just blend 2 parts cream of tartar to 1 part baking soda.
I use McCormicks Cream of Tartar in the glass jar, and Arm and Hammer baking soda purchased from the BAKING aisle
Dump the whole bottle of cream of tartar in to a glass mason jar, then half fill it with baking soda and dump that in the jar, then put a lid on it and give it a good shake-takes seconds.
