Julie - I use the 1 to 1 ratio. The times I have tried it, it actually makes it more moist. It doesn't work for everything, but it is worth a try. You can Google "applesause for oil in recipes" and find more information about it.

Nana, I've heard of that before - is it a 1 to 1 ratio? for 1/2 cup of oil you would use 1/2 cup applesauce? Does it make the food drier?

I have to admit, the fat free cheese isn't bad at all. In fact it actually melts better than regular cheese. So when a recipe calls for cheese I use fat free cheddar and usually a little less than called for. I also use only half the yolks when making something with eggs (like scrambled). It's a lot cheaper than egg beaters too.
