Hi Jenny,
I am allergic to wheat, rye, oats, corn, barley and kamut. I have always had a problem with breakfast until I recently started eating organic brown rice cereal. I have 1 cup with 1 cup frozen wild blueberries and put 1/3 c. Rice dream. (I'm also allergic to dairy and soy products) It's really delicious and very satisfying. Hope you enjoy as much as I do.

One more thought then i have to go----try getting your carbs from other sources i.e. fruit, veggies, potatoes, corn. then you don't even have to consume bread or bread like products

I have a friend who always saved her egg yolks, I think she put them in the freezer to make noodles(I would look up some info on freezing egg yolks just to be sure) I bet you can use them to make rice noodles or something??

Thanks for the great ideas! I need to get a blender so I can make smoothies again.... I add flax meal to mine and oj. need to remember that.....

I'm too dang frugal and forget about just throwing out the yolks! is there something I can do with them instead of the rest of the family? the kids? or is it just not worth it?

I had forgotten about tofu! I used to put THAT in my smoothies too! to get the "milk" look! Will have to try that scramble, it sounds really good!

Try this--2 egg whites and 1 whole egg. you will never miss it, and you get the added protein of egg whites without all the fat and chol. I use to eat eggs everyday until i found out i was allergic to them, now I have a smoothie--1 banana, 1-2 cups of frozen berries, .5 c liquid(rice, soy, Zuch, milk) 1 tbs nut butter(I use almond butter). it taste great.

other sources of protein-- Hummus(chickpeas),
eggless scrambles--
1 lb reg tofu, drained & crumbled
3 tbs olive oil
.5 c onion chopped
1 c. sliced mushroom
.5 tsp thyme
.5 tsp red pepper flake
2 TBS gluten free soy sauce (tamari sauce by San-J)
1 small sweet potato diced
.5 c green bell pepper chopped
1 clove minced garlic
.5 tsp caraway seeds
1 tomato wedged for garnish

in a small bowl blend tofu w/ soy sauce set aside
heat oil in large nonstick skillet over medium heat. Sauté onions, potatoes 5min until onions are translucent & potatoes are golden brown. add mushrooms, green peppers, garlic & spices and cook 3-5 min longer, until peppers and mushrooms are soft. Transfer vag. to a bowl.
return skillet to low heat & sauté tofu until dry(3 min) add vag. to tofu, scramble well and cook just until veg are heated through. Enjoy!!!!

after 8 years I'm stuck again. What to have for brekkie? It's not that I'm tired of eggs- and I can have them- I am just looking at my tracker here and 95% of my daily cholesterol is from my 2 eggs in the am! Couple that with the fact I got a call from the dr office about my bloodwork last week, and I have to go wednesday for a "heartview test" to check for plaque buildup eventhough my "cholesterol was great". My dh's cholesterol ratio is terrible, so we are working on that, so right now, all this is in my radar.

Here's my dilemma: Dr wants me gluten free, allergic to oats (oatmeal), I know I need to think outside the box.... but..... I don't want to eat chicken breakfast lunch and dinner!
