Try this--2 egg whites and 1 whole egg. you will never miss it, and you get the added protein of egg whites without all the fat and chol. I use to eat eggs everyday until i found out i was allergic to them, now I have a smoothie--1 banana, 1-2 cups of frozen berries, .5 c liquid(rice, soy, Zuch, milk) 1 tbs nut butter(I use almond butter). it taste great.
other sources of protein-- Hummus(chickpeas),
1 lb reg tofu, drained & crumbled
3 tbs olive oil
.5 c onion chopped
1 c. sliced mushroom
.5 tsp thyme
.5 tsp red pepper flake
2 TBS gluten free soy sauce (tamari sauce by San-J)
1 small sweet potato diced
.5 c green bell pepper chopped
1 clove minced garlic
.5 tsp caraway seeds
1 tomato wedged for garnish
in a small bowl blend tofu w/ soy sauce set aside
heat oil in large nonstick skillet over medium heat. Sauté onions, potatoes 5min until onions are translucent & potatoes are golden brown. add mushrooms, green peppers, garlic & spices and cook 3-5 min longer, until peppers and mushrooms are soft. Transfer vag. to a bowl.
return skillet to low heat & sauté tofu until dry(3 min) add vag. to tofu, scramble well and cook just until veg are heated through. Enjoy!!!!
