I do the same - I'll make spagetti squash when doing pasta for my hubby, add extra salad & veggies instead of a potato, etc.
Sometimes he's ok with not having any grains for dinner, other times he pouts a bit. I started cooking a big batch of brown rice and freezing it in 1/2 cup servings. That way if he wants rice or it's a higher carb day, I can pull out 1-2 servings and call it good. :)
