Took Mom out for dinner last night and had pickled beets - I liked them! Can't remember if I've ever had them before, but they were good.

My salsa has only 4 ingredients. 3-5 (depending on how hot you like it or how strong the peppers are) roasted then peeled jalapeños , a can of whole peeled tomatoes with the juice, 1/4 yellow onion, 1 bunch of cilantro with stems removed. Blend until it is no longer chunky but don't over blend. Store in a spaghetti sauce or recycled mayonnaise jar for up to a week in the fridge.
My mom was buying Pace until I showed her how to make this. If anyone tries it let me know how you like it.

Life is good!

I love my blended salsa. I've eaten it a million times when visiting family. They always have fresh salsa made and now I make my own too. We put it on several things like eggs, meat, rice, beans, corn on the cob, veggies, etc. It's just so yummy and very low cal. Way better than any store bought blend.

Life is good!

I had never eaten black beans before either, but now love the Morningstar Farms Spicy Black Bean burgers! Guess when I lost the weight I started eating spicier! emoticon

I boiled them but I don't know of other ways to cook it. Looks like a big white carrot.

I've never eaten parsnips either but hubby says they're like a turnip and you can boil them and mash them. Sounds disgusting to me. I don't like turnips!!

I admit I wasn't a big veggie eater before this either, but now I try any vegetable once! And sometimes once is enough! I like eating fresh spinach in salads, but hadn't eaten cooked spinach. Ordered it one night at a restaurant and Jenise said anyone watching me eat it would probably not have ordered it after watching the faces I made! emoticon

Thanks Lynn!
I do not eat veggies very much, never tasted broccoli, asparagus, squash or brussel sprouts. Not likely to taste them at this point in life, 57 years and I am pretty set in the mind set "if I haven't had it I don't want it" Sad but true.....I have tried carrots, celery and cabbage but I only eat those if someone sneaks them into a recipie and I don't know it..... sad.

Jicama is Mexican - a crisp, sweet turnip shaped veggie, also called Mexican Turnip, Mexican Potato, Mexican yam bean, or Chinese Turnip. That's a lot of names for a little veggie!

I had also never tasted salsa, but now there's always a jar in the refrigerator!

not a veggie...but wheatberries...these are a staple now...always have them cooked, measured and baggied in the freezer...always ready!

The longer it takes it to come off the longer it will stay off!

The longer you keep it off the harder it is to put it back on!

Each week we'll discuss something different - what foods we've never eaten before, what new exercise we've tried, what clothes we wear now that we didn't "before". If you have a subject you'd like us to discuss, Sparkmail me and we'll get it on.

This week's topic: What vegetable had you never eaten before embarking on your healthier lifestyle journey?

I had never tried jicama.
