it was my first time too...if i hadnt seen the label i really couldnt tell...my daughter in Austin likes the steaks have not had one yet.

The longer it takes it to come off the longer it will stay off!

The longer you keep it off the harder it is to put it back on!

I've never tried buffalo before. I live in Pennsylvania where deer hunting is big, so I've had lots of venison recipes I've tried. I know some people think it's a crime to kill deer, but wait till they have one jump in front of their car. In one year, both my daughter and my cars got hit by deer.

The vegetable dish sounds good. Last year we made (make that opened) a lot of Progresso Light soups. One cup of soup with a light salad made for a good lunch.

i found the Edamame in the frozen section at Sam's not sure where it might be located.

last night we had ground buffalo...very lean beef...first time...just sauted it with plenty of minced garlic it was a bit dry but flavorful.

we are Croatian and frequently make a dish with any kind of one vegetable...green beans, or peas, or sometimes carrots, Kale etc...basically you boil simmer cook the vegetable in water till cooked to how you like it...mom usually cooks it pretty thoroughly...i like mine a bit more al dente...any way you cook the vegetable and there should be some liquid left too, then you make a roux...olive oil heated up and then a tablespoon or flour or two depending how much water you need to thicken...lots of garlic, with some vegetables a splash of vinegar...you could also make it with a meat like sausage or smoked pork chops that cook with the vegetables and then just thicken.

this is nice in the fall and winter when you dont want a cold salad but something warm and comforting.

I've never tried edamame, will have to look for it at the grocery store next time I go. Was on the Daily SparkBlog the other day and read the blog about Blueberry-Peach Cobblers. It sounded quick, easy and good so I made it for dessert last night. Would have tasted better with low fat ice cream, but we'll try that next time. The recipe can be found at SparkRecipes.com. Edamame...my daughter introduced me to this. it's baby soybeans, look like fat snow peas...they come frozen in packages and you microwave and serve with sea salt...it's kind of an activity food since you have to remove the pods and you eat the beans...fun, new and good for you!

I got this recipe at the Curves I go to, and made it for a picnic I went to Sunday. Easy to make, and I thought it was good.

Zucchini Casserole

2 pounds zucchini, cubed
1 small onion, chopped
1/4 cup green pepper, chopped
2 eggs
1 cup mayo or Miracle Whip (I used Reduced Fat Hellmans mayo)
1 cup parmesan cheese (I used Reduced Fat)
Salt and pepper to taste
Bread crumbs or ritz crackers

Saute zucchini, onion and green pepper.
Mix eggs, mayo, parmesan cheese, salt and pepper.
Add mayo mixture to zucchini mixture.
Place in a buttered casserole dish.
Top with bread crumbs or crushed Ritz crackers (I used 10 crackers)
Bake at 350 degrees for 30 minutes.

Instead of salt I used Mrs. Dash's Table Blend. Put in a 13x9 pan and cut into 24 servings which was about 55 calories per serving. If using 12 servings it still comes out to about 110 calories, which isn't bad.

I've also been just sauteing sliced up zucchini and putting 1/2 cup of spaghetti sauce on top and grating a tablespoon or two of fresh parmesan cheese on top of that. Very satisfying.
