I wouldn't say I'm specifically trying for a "low carb" diet in and of itself; but that it's happening because of the temporary need to cut sugar and starch. But my breakfast had 35g carbs from broccoli and veggies this morning... and I had about 5 cups of parsley yesterday (a rarity to find!) And a total of a bit over 100g carb just from veg - some times I do add quinoa, brown rice, or such, as well - but I find those can still trigger cravings and I struggle with portion sizes on those sometimes. It's getting better, but slowly.
Sadly, greens are a little hard to get where I live. All the local greens taste the same (all taste pretty much like a bitter bok choy) and have about the same nutritional components. There are a FEW varieties that crop up during certain seasons (some people are learning to do hydroponics for green leaf lettuce.) But we have no access to kale, chard, collards, etc. Romaine and spinach sometimes show up, but are usually wilted and/or browning/smelly when they get here. Sadness! But I do try to eat 4-5 cups of salad, minimum, with a base of some sort of green, even if I don't love it - I add lemon and herbs to help with that! And I'm experimenting with other salad dressing recipes :) Then we do a lot of other veggies as we can find them.
I know our meat isn't "clean" either - no organic, grass-fed options here even if I wanted them. Or, rare to find it at least. I am trying to ask around for local farmers, to see if they would sell their animals. I have been told I can buy a local chicken - but then I have to kill and clean it myself! I'm not sure I'm ready for that! *lol* Maybe I can find someone to do that for me...
Water is good! It's all I drink :)
I think I'll just wait it out, see how it goes as I adapt, and see what happens when more carbs come back in the picture.
