Thanks. I was trying to avoid the dairy, so the coconut version sounds like something I should try. The reference to coconut kefir made me think that it might be possible to make coconut yogurt, and lo and behold there are recipes for that online!
I make whole milk Greek yogurt. I leave some of it to yogurt up (post cooking and pre-refrigerating) longer as that causes it to become more tart than plain yogurt. You can do this with coconut milk too.
I also make it into *cream chees* by draining more of the whey out of it. Yum!
www.makeyourownyogurt.com/ Is a link to a website with instructions and video about how to make it. I start it about 9PM at night so it can rest in a warm place overnight then refrigerate/still the next day. Be good about sterilizing your stuff!
Anyone know of a good Paleo substitute for sour cream? Coconut milk does a great job of subbing for cream (which subs for milk), and bacon grease or lard for butter, but haven't figured out the sour cream yet.
