I don't have a lot of personal experience with following this nutritional plan as a vegetarian, so I don't know if I can help you.
I do know that in the first few weeks of undertaking this nutritional plan, I found having enough fat in my diet was crucial to not feeling hungry - can't tell you all the science, just my experience.
Lots of people use coconuts, coco milk and oil to up the fat. Avocado is good too. For me, when I get about 50% of my daily carbs from fat, I am sated. I have lots of energy and am losing weight and body comp is changing for the better.
If you haven't done so already, check out www.marksdailyapple.com, he has a lot of great info in general and I have seen some topics for vegetarians, but haven't ready them.
